Stuffing for Turkey

Combine all ingredients, and stuff into both ends of the bird
- 3 cups celery, chopped
- 1 1/2 cup onion, chopped
- 1 cup margarine, melted
- 3 Tbsp. poultry seasoning
- 2 eggs, beaten
- 3/4 tsp. pepper
- 1/3 tsp. salt
- 3 cups of broth (made by simmering giblets and pouring through colander)
- 24 cups bread cubes (using square sandwich bread)
Chicken Cordon Bleu Pizza

Unroll dough into a greased 15-in
- 1 tube (13.8 ounces) refrigerated pizza crust
- 1/2 cup Alfredo sauce
- 1/4 teaspoon garlic salt
- 1 cup (4 ounces) shredded Swiss cheese
- 1-1/2 cups cubed fully cooked ham
- 10 breaded chicken nuggets, thawed and cut into 1/2-inch pieces
- 1 cup (4 ounces) shredded part-skim mozzarella cheese
Buttermilk Salad Dressing

In small bowl, whisk all ingredients
- 1 cup mayonnaise
- 1 cup buttermilk
- 1/2 tsp. onion salt
- 1/4 tsp. paprika
- 1/8 tsp. pepper
Parmesan Baked Potatoes

Pour butter into 13 x 9” glass baking dish
- 6 Tbsp. butter or margarine, melted
- 3 Tbsp. grated parmesan cheese
- 8 medium unpeeled red potatoes, halved lengthwise
Egg Fried Rice

In medium size saucepan combine water, onion salt and poultry seasoning
- 1 3/4 cups water
- 1 tsp. onion salt
- 1/2 tsp. poultry seasoning
- 1/4 cup soy sauce
- 2 cups Minute Rice
- 3 eggs
- 3 Tbsp. milk
- 4 Tbsp. butter
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/2 cup chopped scallions (if desired)
LSD (Lemon Sesame Dressing)

Toast sesame seeds in frying pan with NO oil or butter
- 1/4 tsp. sesame seeds
- juice of 2 lemons
- 2 Tbsp. red wine vinegar
- 1 cup vegetable oil
- 1 Tbsp. soy sauce
- 1/2 tsp. dry mustard
- 1 tsp. thyme
- 1 tsp. rosemary
- 1 tsp. basil (eliminate if using fresh basil later in recipe)
- 2 garlic cloves
- 1 cup fresh herbs (parsley, scallions, chives, basil, etc.)
Marinated Garden Tomatoes

Combine all ingredients and pour over tomatoes in a large bowl
- 6 large tomatoes, wedged
- 1/2 cup diced green onions
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 1/4 cup minced fresh parsley
- 2 garlic cloves, minced or crushed
- 1 tsp. salt
- 1 Tbsp. thyme
- 1/4 tsp. pepper
Spicy Potato Wedges

Place all ingredients in a Ziploc bag and shake
- White potatoes washed and sliced in wedges (approx. 1-1 1/2” thick)
- Canola or Olive oil (enough to lightly coat potatoes)
- Onion or garlic salt (based on preference)
- Parsley
- Paprika
Layered Spinach Salad

Combine ½ cup Romano cheese and bacon, mix well
- grated Romano cheese
- 3 crisply cooked bacon strips, crumbled
- 1 1/2 qts. washed, dried, and torn spinach
- 2 cups mushroom slices
- 1 cup red onions cut into thin rings
- 10 oz. pkg. frozen peas, cooked and drained
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 tsp. sugar
Harvard Beets

Combine sugar and corn starch; add vinegar and water and boil mixture for 5 minutes
- 3/4 cup sugar
- 1/3 cup vinegar
- 1/4 tsp. salt
- 4 cups cooked, diced beets
- 2 tsp. corn starch
- 1/3 cup water
- 1/8 tsp. pepper
- 3 Tbsp. butter or margarine
