- 2 Tablespoons vegetable oil
- 1 (2 to 2 1/2 pounds) chuck roast
- 1 teaspoon pepper
- 1 cup beef broth
- 1 cup dry red wine
- 1 1/2 teaspoon dried Italian seasoning
- 1 small onion, halved and quartered
- 2 bay leaves
- 4 medium carrots, peeled and cut into 1 inch pieces
Cucumber and Radish Salad

- 2/3 cups dried cranberries
