Loaded Smashed Potatoes

Boil potatoes whole for about 15 min or until fork tender
- 1 lb mini golden potatoes (or red)

- 1 medium spaghetti squash (about 3 lb)

Sunny's Vegetable Chips with Blue-Cheese Dip

1. Make the dip: Blend the heavy cream in a blender until slightly thickened
- For the Dip:
- 1/2 cup heavy cream
- 1 8-ounce container sour cream
- 2 Tablespoons lemon juice
- 4 ounces blue cheese, crumbled
- 2 scallions, finely chopped
- 1/2 teaspoon garlic powder
- Kosher salt and freshly ground pepper
- For the Chips:
- Vegetable oil, for frying
- All-purpose flour, for dredging
- 2 medium to large beets (1 red, 1 yellow), peeled and sliced 1/8 inch thick

- 8 cups French bread, cut into 1-inch cubes
- 3 tart apples, peeled and chopped
- 8 ounces cream cheese, softened
- 3/4 cups brown sugar
- 1/4 cup sugar
- 1/4 cup apple juice
- 2 teaspoons vanilla, divided
- 1/2 cup English toffee bits
- 5 eggs
- 3/4 cup milk
- Apple Syrup:
- 1 cup sugar
- 2 Tablespoons cornstarch
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 cups apple juice
- 2 Tablespoons lemon juice
- 5 Tablespoons butter
Grilled Gorgonzola Rib-Eye

Combine 2 Tablespoons of the oil, vinegar, and steak seasoning and brush over steaks
- 1/4 cup olive oil
- 2 teaspoons balsamic vinegar
- 2 teaspoons mixed pepper seasoning for stead
- 4 small (8 ounce) boneless rib-eye steaks, about 1 inch thick
- 2 medium red onions, cut into 1/2 inch thick slices

- 3 garlic cloves, roughly chopped
- 1 bunch Swiss chard (10 ounces), stems cut into 1/2-inch pieces, leaves torn into 2-inch pieces
- 1 small yellow onion, diced small
- 2 medium carrots, diced medium
- 1 1/2 teaspoons finely grated lemon zest, plus wedges for serving
- 1 1/2 cups basmati rice
- 2 1/2 cups low-sodium chicken broth
