- 4 corn tortillas, cut into thin strips
- 2 1/2 tsp low-sodium taco or fajita seasoning
- 1/2 red onion, chopped
- 1 lb lean ground beef
- 1 clove garlic, finely chopped
- 1 pt cherry tomatoes, halved
