CELERIAC AND CHESTNUT SOUP

Heat olive oil in a large pot on medium heat
- INGREDIENTS
- 1 Tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp tightly packed, freshly chopped sage
- 1/2 tsp salt
- 1/4 tsp dried thyme
- 1/4 tsp chili flakes
- 1/4 tsp cracked black pepper
- 2 medium celery roots, trimmed, peeled and finely chopped
- 10 oz. roasted and peeled chestnuts
- 1 (15 oz) can white beans, drained and very well rinsed
- 6 cups vegetable broth (or 6 cups water and 2 tsp better than bouillon)

Preparation: Mix tofu and oil together until smooth
- 3/4 cup soft tofu
- 4 tbsp organic olive oil
- 1 tsp sea salt
- 1/2 cup water
- 1/2 tsp black pepper
- 1 1/4 cups organic whole wheat flour
- 4 sheets egg-free flat bread, crumbles
- Organic vegetable broth or soup
- 1 egg substitute (2 tbsp water, 1 tbsp oil, 2 tsp baking powder)

- 1 red onion, peeled, cut into eighths
- 1 red, yellow or green bell pepper, cut into 1-inch pieces
- 1 tablespoon chopped fresh rosemary
- 1/4 cup olive oil, divided
- 1 prepared pizza dough, recipe from above
- 1 cup (4 ounces) shredded mozzarella cheese
