- chocolate (I like to use Ghirardelli)
- graham crackers, crushed (but not too fine)
- lollipop sticks (I used 6" sticks- these are available at craft stores)

Every year around this time, I start getting antsy to go outside and start up my grill
- 1 cup bulgur
- 3/4 teaspoon salt, divided
- 1 cup boiling water
- 2 medium organic zucchini, cut length-wise into 1/2-inch-thick slabs
- 2 sweet onions, cut into 1/2-inch-thick rounds
- 3 large organic portobello mushrooms, caps only, wiped clean
- 2 cups organic cherry tomatoes
- 3 tablespoons extra virgin olive oil, divided
- 1 dash black ground pepper, to taste
- 1/4 cup walnuts, chopped (optional)
- 3 tablespoons fresh lemon juice
- 1/2 cups fresh parsley, chopped
- 1/2 cup fresh mint, chopped

1. Preheat oven to 350 degrees F
- 1 eggplant, sliced in half-moons
- 1 red onion, chopped
- 3 large mushrooms, chopped
- 1 teaspoon olive oil
- pinch sea salt
- 1 cup red rice
- sprinkle balsamic vinegar
- handful winter greens (I used mustard greens)
Burger: Artichoke Spinach Cauliflower Bean Burgers

In a food processor, process all the ingredients from beans till cumin powder until most of the beans are mashed
- Ingredients:
- 1 15 oz can great northern beans like Eden Organic, or other white beans, or 1.5 cups cooked
- 1/2 cup oats
- 3/4 cup spinach
- 5 to 6 artichoke hearts, I used canned
- 1/2 tsp salt
- 1/4 to 1/2 tsp black pepper
- 1/4 tsp cayenne
- 4 cloves of garlic
- 1/3 cup chopped white or red onion
- 2 Tbsp flax seed meal or Chia Seeds ( I used 1 Tbsp flax and 1 Tbsp chia)
- 1 tsp italian herb blend
- 1/2 tsp onion powder
- 1/4 tsp cumin powder
- 2 tsp prepared mustard
- 2 tsp olive oil
- 2 tsp lemon juice
- 2 Tbsp nutritional yeast
- 3/4 cup small cauliflower florets
- 1/3 cup chopped carrots
- 1/4 cup cashews or use seeds to make nut-free
- 1/4 cup breadcrumbs or oat flour or chickpea flour

Jerusalem Artichoke Gratin

In a large saucepan, combine Jerusalem artichokes and milk
- In a medium saucepan, simmer corn and 1/4 cup milk over medium heat until corn is tender, 5 to 7 minutes. Remove from heat; stir in cream cheese and chives. Season with salt and pepper. If desired, adjust consistency with a little more milk.
