Creamy shrimp salad with avocado

Add Greek Yogurt Dressing ingredients to a small food processor or Magic Bullet and process until smooth
- 2 Avocados, medium
- 2 Bell peppers, medium
- 1/2 cup Cilantro
- 1 Garlic clove, tiny
- 1 cup Grape tomatoes
- 1/2 Long english cucumber
- 1/2 tsp Black pepper
- 1/3 tsp Salt
- 2 tsp Apple cider vinegar
- 1/2 cup Greek yogurt
- 1 lb Cooked frozen shrimp or 12 oz thawed & drained, cut in halves

- 1 lb crimini mushrooms, cleaned
- 2 cups cauliflower, cut into small florets 2 cups cherry tomatoes
- 12 garlic cloves, peeled

- 3 lbs (1.5 kg) Brussels sprouts, trimmed (and cut in half, if large)
- 6 medium zucchini, cut in 1 inch (2.5 cm) chunks, about 6 cups (1.5 L)
- 3 red peppers, cut in 1 inch (2.5 cm) chunks
- 1/3 cup (80 mL) olive oil
- Salt and freshly ground pepper
- 1/4 cup (60 mL) oregano sprigs, about 10 sprigs
- 1/4 cup (60 mL) rosemary sprigs, about 6 sprigs
- 1/4 cup (60 mL) parsley sprigs, about 10 sprigs
- SICILIAN VINAIGRETTE
- 1/2 cup (125 mL) olive oil
- 3 tbsp (45 mL) lemon juice
- 2 tbsp (30 mL) chopped fresh oregano
- 1 tsp (5 mL) chopped garlic
