Maple-Glazed Bacon-Wrapped Salmon on a Plank

Soak PC Cedar Grilling Plank in cool water for 4 hours, weighing down to keep submerged
- 4 tsp (20 mL) PC 100% Pure Medium Maple Syrup
- 4 tsp (20 mL) PC Old Fashioned Dijon Prepared Mustard
- 2 tsp (10 mL) PC 100% Pure Safflower Oil
- 1 pkg (280 g) frozen PC Applewood-Smoked Bacon Wrapped Atlantic Salmon Skinless Fillets
Shrimp Tacos -Chipotle Lime

In a large ziptop plastic bag, combine the lime juice, olive oil, honey, chipotle in adobo sauce, garlic and lime
- For the Chipotle Lime Shrimp:
- 6 tablespoons fresh lime juice
- 1/4 cup extra virgin olive oil
- 1/4 cup honey
- 2 tablespoons chipotle in adobo sauce
- 2 cloves garlic, minced
- zest of 1 lime
- salt and pepper
- 1 lb shrimp, defrosted, peeled and deveined
- For the Chipotle Lime Crema:
- 1/2 cup reduced fat sour cream
- 1 tablespoon chipotle in adobo sauce
- 1 tablespoon lime juice
- zest of 1 lime
- 1 clove garlic, minced
- For the Tacos:
- 8 White Corn Tortillas
- shredded cabbage
- diced avocado
- cilantro
- diced mango
- diced tomatoes
- Note
- To Make your own substitute for chipotle in adobo sauce:
- 1 tbsp tomato paste (or if you must – ketchup)
- 1 tbsp cider vinegar
- 1 tsp chipotle powder (or smoked paprika/cayenne powder mix)
- 1/2 tsp cumin
- pinch of oregano
- pinch of garlic powder
- pinch of salt
- Mix well
Berry Salad with Strawberry Balsamic Vinaigrette Dressing

For the dressing, push a straw through the strawberries from the tip to the green top to remove the hull
- Dressing:
- 5 ozs baby spinach leaves
- 1 cup strawberries, sliced
- 1/2 cup blueberries
- 1/2 red onion, thinly sliced
- 1 sweet apple, cored, halved, and thinly sliced
- 1 cup candied walnuts, chopped
- 1 cup strawberries
- 1/4 cup balsamic vinegar
- 1/4 cup extra-virgin olive oil
- 1 Tbsp. dijon mustard
- 1 Tbsp. honey
- 1 clove garlic, minced
- 1/4 tsp salt
- 1/4 tsp pepper
- Garnish:
- Feta cheese
Ham Glaze

- 1 tsp dry mustard

- 2 sweet potatoes peeled and cut in 1/2-inch (1 cm) cubes

- 450 g jumbo shrimp (21 to 25 count), peeled and deveined
- 1 cup frozen corn kernels
