STRAWBERRY RHUBARB PIE ~ A SUMMER FAVORITE

Preheat oven to 425 degrees F
- 9 INCH PIE CRUST (TWO CRUST PIE RECIPE)
- 2 C Flour
- 1 tsp Salt
- 2/3 C Shortening
- 6 tbsp of Ice water (very important)
- Directions
- STRAWBERRY RHUBARB PIE
- 2 1/2 C Strawberries, sliced
- 2 1/2 C Rhubarb, cut into 1-2 inch pieces
- 1 C Sugar, plus extra tsp. to decorate crust
- Zest of one orange (use less if you like)
- 1/4 C Quick-cooking tapioca
- Dash of Salt
- 1 – 2 tbsp Butter (use real butter)
Baileys Irish Cream Brownies.

- Icing:
- 1 box brownie mix
- 3/4 c butter
- 1/3 c Baileys
- 3 c icing sugar
- Ganache:
- 3/4 c semi sweet chocolate chips
- 2 tbsp whipping cream

Sweet Potato Chocolate Chip Bread

- 16 ounces canned sweet potato purée (or 2 medium baked sweet potatoes)
- 3 eggs
- 1/4 cup liquid coconut oil
- 1/4 cup maple syrup
- 1/4 cup unsweetened coconut milk
- 1 teaspoon pure vanilla extract
- 1/2 cup + 3 tablespoons coconut flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger

- 1 package (8 ounces) cream cheese or reduced-fat cream cheese (Neufchâtel) , softened
- 1 tablespoon chopped fresh dill weed or 1 teaspoon dried dill weed
- 4 flour tortillas (8 to 10 inches in diameter)
- 1 package (4 1/2 ounces) smoked salmon, skinned and finely chopped
- 16 spinach leaves
- 16 strips (about 5x1/4 inch) red bell pepper

- 2 tablespoons olive oil
- 1/2 bell pepper, sliced
- 1 portobello mushroom, sliced

- 1 cup rice

- 2 heaping tablespoons almond butter
- 2 tablespoons soy sauce
- 1 tablespoon maple syrup

- 4 boneless skinless chicken breasts or 6-8 boneless chicken filets
- 1/2 red pepper, finely sliced
- 8 ounces bean sprouts
- 1 tablespoon oil
- 4 cloves garlic, minced
- 1 tablespoon fresh grated ginger
- 4 green onions, chopped & divided
- 1 package (8-10 ounces) fresh egg noodles
- 1/2 cup Hoisin sauce
- For the sauce
- 1/2 cup chicken broth
- 4 tablespoons soy sauce
- 2 tablespoons Hoisin Sauce
- 2 tablespoons Oyster Sauce
- 2 teaspoons sesame oil
- 4 teaspoons corn starch

- 1 pound (500 g) thin spaghetti pasta, (dry weight)
- 1 pound (500 g) boneless skinless chicken breasts, (2 large breasts)
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- 1/4 cup olive oil
- 2 tablespoons minced garlic
- 2 tablespoons red onion, finely chopped (about 1/3 of a red onion)
- 2 tablespoons balsamic vinegar, (adjust to your tastes)
- 8 roma tomatoes, diced
- 1/2 cup grated parmesan cheese, plus more to serve
- 2 tablespoons finely chopped fresh basil or parsley
- Salt and pepper, to taste
- Balsamic glaze to serve (optional) -- I use store bought
