CREAMY MUSHROOM RISOTTO

Heat the olive oil in a large saute pan
- 1 tbsp olive oil
- 1 shallot or 1/2 white onion, diced
- 3 garlic cloves minced
- 100 g / 1 cup button mushrooms thinly sliced
- 100 g / 1/2 cup risotto rice
- Approx 500ml / 2 cups vegetable stock
- Optional 1/2 tbsp white wine vinegar *
- Optional 4 tbsp nutritional yeast flakes **
- Fresh parsley to serve
- Salt and pepper to taste

Chicken Bacon Ranch Pasta Recipe

Start by cooking your pasta, draining it, and setting it aside
- 1 pound of penne pasta
- 6 strips of bacon, diced
- 2 tbsp all-purpose flour
- 1 packet of ranch seasoning mix
- 2 cups milk
- 1 tbsp butter
- Salt and pepper
- 2 boneless skinless chicken breasts (cut into pieces)
- 1 cup shredded cheddar cheese

- INGREDIENTS
- 2 tbsp (30 mL) chives, snipped
