STUFFED ZUCCHINI

Cook zucchini in boiling salted water for 5 minutes
- 3 - Whole Zucchini
- 3 - tbsp. minced onion
- 3 - butter
- 1 - cup soft bread crumbs 1/2 oat meal
- 1 - Chopped Tomato
- 1/2 - tsp. basil
- 1/3 - cup of Parmesan cheese
- Salt and pepper to taste

RECIPE NOTES: My tip for scraping out zucchini flesh
- 3 medium, uniformly-sized zucchini
- 1 (24 to 26 ounce) jar tomato basil marinara, divided
- 1 tablespoon olive oil
- 1 pound lean ground turkey or beef
- 1/3 cup chopped onion
- 1 teaspoon minced garlic
- 1/3 cup chopped red bell pepper
- 1/2 cup chopped brown button mushrooms
- 1/4 cup chopped fresh Italian parsley
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- Fresh ground black pepper, to taste
- 1/4 teaspoon crushed red pepper, or to taste
- 1-1/2 cups shredded part-skim mozzarella cheese
- 1/4 cup shaved or shredded Parmesan
- 2 tablespoons Italian style panko bread crumbs

Preheat oven to 350* Brown beef in large saucepan and drain
- Yields: 8-10 servings
- 1 lb ground beef
- 1/2 lb ground Jimmy Dean sausage
- 5 cups (1 lg + 1 sm jar) thick spaghetti sauce
- 1 1/2 cups water
- 2 cups small curd cottage cheese
- 4 cups shredded mozzarella or Monterey Jack cheese
- 1/2 cup grated Parmesan cheese
- 2 eggs
- 1/4 cup finely chopped parsley
- 1 tsp salt
- 1/4 tsp pepper
- 8 oz uncooked lasagne noodles

- 9 9 9 ozs. - tequila (that's why they are strong!)
- 2 2 to oz. - Grand Marnier, that's what I like to use, but you can also use Triple Sec

Carmel Apple Dessert

Mix: water crumbs and butter, press onto bottom of a 13 X 9 inch pan
- 60 NILLA Wafers finely crushed (about 2 cups)
- 1/2 cup of buttter, melted
- 1 pkg. 18 oz. Cream Cheese, softened
- 1/4 cup sugar
- 3 1/4 cups milk, divided equally
- 1 tib (8 oz.) Cool Whip Whipped Topping, thawed, divided
- 2 pkg's. (3.4 oz.each) JELL-O Vanilla Flavor instant pudding
- 1/2 cup caramel ice cream topping, divided
- 1 each red and green apples, chopped
- 1/4 cup Planters Cocktail Peanuts, chopped
Chicken Pot Pie

For the chicken: Start by putting the chicken in a pot and covering it with water
- One 2- to 3-pound chicken fryer, cut up
- 3 celery stalks
- 3 medium carrots, peeled
- 1 large yellow onion
- 4 tablespoons (1/2 stick) butter
- 1/4 cup all-purpose flour
- 2 cups low-sodium chicken broth or stock
- 1 chicken bouillon cube
- 1/4 cup white wine, optional
- 1/2 cup frozen peas
- 1 cup heavy cream
- 2 sprigs fresh thyme
- 1 teaspoon kosher salt, or more as needed
- Black pepper
- 1/2 recipe Thyme Pastry, recipe follows
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 1/2 cups (3 sticks) cold butter
- 1 egg
- 5 tablespoons cold water
- 1 tablespoon distilled white vinegar
- 1 sprig fresh thyme leaves
MEXICAN TORTILLA CASSEROLE

Spray a spring form, round cake pan or casserole with cooking spray
- 1 lb. ground beef
- 1/2 onion, diced
- 1 package taco seasoning
- 2 cup cheddar cheese, shredded
- 1 can re-fried beans (spread easier if you warm them in microwave)
- 1 cup prepared rice (I used minute )
- 1 can Mexican blend corn (drained) will only use about 1/2 can
- 4-5 large flour tortillas
- 8 oz. thick chunky salsa
- Top with (if desired), Sour Cream, Diced onion, Shredded lettuce.
