ZUCCHINI-OAT BREAD

- INGREDIENTS:
- 1 ½ cups sugar
- 2 ¼ tsp. ground cinnamon
- 2 ½ cups all-purpose flour
- 1 cup rolled oats
- 1 tsp. baking powder
- ¾ tsp. salt
- ½ tsp. baking soda
- 3 eggs
- 1 cup applesauce
- ¼ cup butter, melted
- 1 tsp. vanilla
- 2 cups shredded, unpeeled zucchini
- 1 cup chopped walnuts or pecans
- ¾ cup raisins
PORK CHOPS (Anna's recipe)

Note: If desired you can substitute pork chops for chicken breasts
- 4-6 Pork chops
- 1 small onion, finely chopped
- 1 1/2 cups flour
- 4 tsp. paprika
- 3 tsp. salt and 1/2 tsp. black pepper
- 2 cups milk
- 1/2 cup butter
- Juice from one lemon
- (Chicken substituted for pork chops)
- 2 - 3 chicken breasts
- 3 tsp. sage
- 1 tsp. paprika
- 1/4 cup butter
- 1/4 cup olive oil
- 1 cup milk
- 1 cup chicken stock
CORN BEEF (BASTE RECIPE)

Bake in oven at 250 deg
- Brown sugar
- Yellow mustard
- Pineapple juice (enough to make a paste or glaze)
BOURBON CHICKEN

Heat oil in a large skillet
- 2 lbs. boneless chicken breasts, cut into bite-sized pieces
- 1-2 tbsp. olive oil
- 1 garlic clove, crushed
- 1/4 tsp. ginger
- 4/4 tsp. crushed red pepper flakes
- 1/4 cup apple juice
- 1/3 cup light brown sugar
- 2 tbsp. ketchup
- 1 tbsp. cider vinegar
- 1/2 cup water
- 1/3 cup soy sauce
- NOTE: SERVE OVER HOT RICE
TARTAR SAUCE

- Mayonaise
- Diced Dill Pickle
- Onion Juice (Scrape the onion with a knife to get juice)
- Parsley Flakes
- Dash of Garlic Salt
- Lemon Juice
SWEDISH MEATBALLS

- Meatballs:
- 2 slices white bread, without the crusts, torn into pieces
- ¼ cup milk
- ¾ lb. ground beef
- ¾ lb. ground pork
- 1 small red onion, grated or very finely chopped
- 1 egg
- 1/8 tsp. ground allspice
- ¼ tsp. ground cardamom
- 1/8 tsp. ground ginger
- Salt and freshly ground black pepper
- Butter and vegetable oil for frying meatballs
- Gravy:
- 2 cups beef stock
- 2 tbsp. flour
- ¼ cup heavy cream
- Salt and freshly ground black pepper
- Fresh parsley, for garnish
APRICOT JAM

Pour boiling water over fruit and let stand for 3 minutes
- 3 cups fruit
- 2 cups sugar
TUNA MAC DELIGHT

This tuna salad is perfect for a quick midweek meal as well as a good ol picnic standby
- 1 (13 oz.) box of dried whole wheat pasta (rotini,elbow and shells all work great)
- 1 1/2 cups light mayonnaise
- 2 cups shredded or cubed cheddar cheese
- 3/4 cup sweet pickle relish
- Pepper to taste
- Garlic salt to taste
- 2 (7 oz.) cans of chunky light tuna packed in water, drained
- 1/2 red onion, diced
- 3/4 cup chopped dill pickle
- 5 celery stalks, finely chopped
Taco Soup

This recipe was recommended by Suzi, who says it also will freeze very well
- 2 lbs. Ground Beef
- 1 large onion, chopped
- 1 can Pinto beans
- 1 can of Whole kerrnel corn
- 1 can of Stewed Tomatoes - mexican style
- 1 can of Rotel Tomatoes
- 1 pkg. Taco Seasoning mix. (optional)
- 1 pkg.Original Hidden Valley Ranch dressing
- 2 1/2 cups water or more, to make soup broth.
WACKY CAKE

- 3 cups flour
- 2 cups sugar
- 6 tbsp. cocoa
- 2 tsp. baking soda
- 1 tsp. salt
- Mix together then add ¾ cup cooking oil, 2 tbsp. vinegar, 2 tsp. vanilla, 2 cups cold water. Mix; don’t beat!!
