POTATO SOUP ( BEST EVER)

In large pot, boil potatoes in water 10 minutes
- GARNISH:
- 2 1/2 lbs. baby-red potatoes,sliced into small bite size pieces
- 1/2 regular package uncooked bacon, finely diced
- 1 medium onion, diced
- 1/4 bunch of celery,diced
- 8 cups milk
- 4 cups water
- 4 chicken bullion cubes (use a cup of the hot potato water to dissolve, then use the cup of hot water in place of one of the above cups of water)
- 1 tsp. salt
- 1 tsp. black pepper
- 3/4 cup salted butter
- 3/4 cup flour
- 1/4 bunch freshly chopped parsley
- 1 cup whipping cream
- Shredded cheese
- fried bacon bits
- chopped green onions
Grandma's Zucchini Cake

THE FROSTING AMOUNT ASSUMES THAT YOU ARE GOING TO KEEP THE CAKE IN THE PAN AND ONLY FROST THE TOP
- Frosting:
- 2 cups flour
- 2 tsp. cinnamon (can sub 1 tsp. with other spices such as allspice and nutmeg, go easy on the cloves though)
- 2 tsp. baking soda
- 1 tsp. salt
- 1/4 tsp. baking powder
- 3 eggs
- 2 cups white granulated sugar
- 1 cup vegetable oil
- 1 tsp. vanilla extract
- 1 tsp. grated lemon zest (optional my addition)
- 2 cups (from about 3-4 regular sized zucchini) grated un-peeled zucchini (place grated zucchini in a sieve and press out some of the excess moisture before measuring)
- 1 cup chopped walnuts or pecans (my grandmother recommends black walnuts)
- 1/2 cup golden raisins
- 3 oz. cream cheese, softened to room temperature (Philadelphia cream cheese recommended)
- 1/4 cup butter, room temperature
- 1 1/2 cups of powdered sugar
Chicken and Noodles

Quick and easy recipe
- 4 cups water and 4 chicken bullion cubes in a pan and bring to a boil.
- Add 3 1/4 cups of egg noodles. Cook uncovered until tender. DO NOT DRAIN
- add 1 can cream of chicken soup and 1 1/2 cups cooked chicken. Heat through. Remove from heat and add 1/2 cup sour cream. Garnish with parsley or minced green onions.
TUNA NOODLE CASSEROLE

NOTHING SAYS NOSTALGIA LIKE A GOOD TUNE NOODLE CASSEROLE
- 5 tbsp. unsalted butter, divided, plus butter for baking dish, plus 1 tbsp. melted
- 1 1/2 medium yellow onions, diced
- Salt and freshly cracked black pepper
- 5 cups white button mushrooms, trimmed and sliced
- 1/4 cup sherry
- 2 tsp. soy sauce
- 1/4 cup all-purpose flour
- 2 cups low-sodium chicken broth or chicken stock
- 1 cup whole milk
- 1 tbsp. fresh lemon juice
- 1 cup frozen petite peas
- 2 ( 5oz. ) cans tuna packed in oil and drained.
- 3 cups dry egg noodles
- 2 cups grated cheddar cheese
- 3/4 cup bread crumbs (recommended panko)
REFRIGERATOR PICKLES

In a medium saucepan, boil 4 cups of water; reduce to a simmer and add garlic
- 10 cloves garlic, peeled
- 2 cups white vinegar
- 6 tsp. Kosher salt
- Several sprigs fresh dill
- 1 tsp. celery salt
- 1 tsp. coriander seed
- 1 tsp. mustard seed
- 1/2 tsp. black pepper corns
- 6 Kirby cucumbers, quartered lengthwise
- 6 medium carrots, peeled and cut in half lengthwise
- 1 handful of green beans
- Few pieces of cauliflower
- 2 jalapenos

1. Preheat oven to 350°F
- Nonstick cooking spray
- 2 1/2 cups finely crushed graham cracker crumbs
- 1/2 cup butter, melted
- 4 packages (8 ounces each) Philadelphia Cream Cheese, softened
- 1 cup sugar
- 2 teaspoons vanilla
- 4 eggs
- 1 package (12-ounce) white chocolate chips
- 1 1/2 cups dried cranberries
- 4 ounces Philadelphia Cream Cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract

This is really an exceptional tasting soup
- 4 cups white chicken meat cut into bite size pieces
- 2 stalks chopped celery
- 2 tbsp. minced garlic
- 3 large chopped carrots
- 1 tbsp. dried minced onions
- 1/4 cup butter
- 2 bouillon cubes
- 1 bag of egg noodles
- 12 cups of Swanson chicken broth
- 1/2 tp dried marjoram
- 1/2 tsp. ground black pepper
- 1 bay leaf
- 1 tbsp. dried parsley
- Pinch of salt
