Apple Cinnamon Bread!

Preheat oven to 350 degrees
- 1/3 cup brown sugar (not packed)
- 1 teaspoon ground cinnamon
- 2/3 cup white sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 3/4 teaspoons baking powder
- 1/2 cup milk
- 1 apple, peeled and chopped
APPLE CRISP

- Combine:
- 6 Apples cut up in a pan
- 1/2 cup of oatmeal
- 1/2 cup of brown sugar
- 1/4 cup of flour
- 1/2 tsp. cinnamon
- Cut-in above:
- 1/4 cup of butter
- Dash of salt.
- Combine above with apples in a 10 X 6 X 2 “ baking dish.
BEEF ENCHILADA DIP

Beef Enchilida Dip make a perfect warm,meaty,cheesy and delicious dip
- 1 1/2 - 2 lbs. ground beef
- 1/2 medium onion, diced
- 2 cloves garlic, minced
- 2 cups enchilada sauce
- 2 cups Monterrey jack cheese or cheddar cheese grated
- Sour cream (optional)
- Tortilla Chips (optional)
Big Pan Rubarb Pie

- Rhubarb mixture:
- 2 3/4 cups sugar, divided
- 1/4 cup flour
- 3/4 tsp. salt
- 1 cup whipping cream
- 6 eggs separated
- 5 cup cut-up rhubarb
- 2 tsp. vanilla
- Shortbread Crust:
- 1 cup butter
- 2 cups sifted flour
- 2 tbsp. sugar

Lemony Poppy Seed Loaf

Beat egg whites till soft peaks form and set aside
- 1 3/4 cups flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 2 tbp. poppy seeds
- 2 tbsp. grated lemon zest
- 2/3 cup sugar
- 1/3 cup oil
- 1/3 cup applesauce
- 3/4 cup sour cream
- 1/4 cup lemon juice (approx. 2 lemons)
- 3 egg whites

- 1 80z. block cream cheese softened
- 1 cup Cheddar cheese shredded
- 8 slices of bacon, cooked and chopped
- 1 Jalapeño pepper minced (Optional)

- Kosher salt
- Fresh Black pepper
- Chopped fresh chives, for garnish

Preheat the oven to 375 degrees F
- 5 pounds russet potatoes, peeled and diced, and boiled until fork-tender
- 8 egg yolks
- 1 stick butter, softened
- Salt and freshly ground black pepper
- Nutmeg
- 1 1/4 cup heavy cream
- 1 whole egg
PUMPKIN GINGERSNAP PIE

Beat half and half cream and pie filling in a large mixing bowl with a wire whisk for 1 minute
- 1-1/2 cups half and half, cream or milk
- 1 pkg. vanilla instant pudding
- 3-1/2 oz. Cool Whip whipped topping
- 1 cup each: pecans and gingersnaps, chopped
- 1/2 cup canned pumpkin
- 1-1/2 tbsp pumpkin pie spice
- 1 graham cracker crumb pie crust
