RAPID ROAST

1. Preheat oven to 500deg
- 1 - 6 lb. beef roast, such as prime rib, standing rib, or top sirloin
- 1 clove of garlic
- Salt and Pepper to taste
PEANUT BRITTLE

- 3 cups sugar
- 1 cup water
- 1 cup light corn syrup
- 2 cups raw Spanish peanuts
- 1 tsp. salt
- 1 tsp. vanilla
- 1 tbsp. butter
- 1 tsp. baking soda
- (This is what I use)
- 1 tbsp baking soda (this is for thick brittle)
- ½ tsp. baking soda (this is for thinner brittle)
BIG DADDY BISCUITS

Combine and mix dry ingredients, then stir in 1 cup of milk
- 2 Cups of flour
- 1 tbsp. baking powder
- 1 tsp. salt
- 1 tbsp. sugar
- 1/3 cup of shortening
- 1 cup of milk
Gelatin Cream Cake

Preheat oven to 375 degrees F
- Crust:
- 3/4 cup butter, room temperature (1 1/2 cubes)
- 1/2 cup brown sugar, packed
- 1 1/2 cup flour
- 1 cup chopped nuts
- Filling:
- 1 small box lemon flavored gelatin
- 1 cup hot water
- 3/4 cup sugar
- 8 oz cream cheese
- 1 cup whipping cream
- Topping:
- 2 small boxes or 1 large box strawberry flavored gelatin
- 3 cups hot water
- fresh strawberries, chopped, optional

DANISH PUFFS

Cut ½ cup butter into 1 cup flour until mixture resembles coarse meal
- 1 cup margarine
- 2 cups flour divided
- 2 tbsp. cold water
- 1 cup water
- 1 1/4 tsp. almond extract
- 3 eggs
- 1 cup powered sugar
- 1/2 tsp. vanilla extract
- Dash of salt
- 1 to 2 tbsp. milk
French Silk Pie

Directions For the crust: Preheat the oven to 350 degrees F
- 12 graham crackers (the 4-section large pieces)
- 1/3 cup butter, melted
- 1/3 cup sugar
- 4 ounces unsweetened baking chocolate
- 1 1/2 cups sugar
- 1 cup (2 sticks) salted butter, softened but still cold
- 1 teaspoon vanilla extract
- 4 eggs, cold
- 1 1/2 cups heavy cream
- 1/4 cup powdered sugar
- Piece of semisweet chocolate, for grating
APRICOT SYRUP (AUNTIE AGNES)

BRING MIXTURE TO A ROLLING BOIL , THEN BOIL FOR 1 MINUTE
- 1 1/4 CUPS JUICE
- 1 1/2 CUPS SUGAR
- 1/4 CUPS CLEAR KARO SYRUP
- 1 TB. LEMON JUICE
- TO MAKE JUICE PLACE FRUIT CUT IN QUARTERS IN KETTLE AND COVER BOTTOM OF THE PAN WITH 1/2" WATER. BRING TO A BOIL AND SIMMER 10 MINUTES. PARTLY COOK AND PUT THRU A COLLANDER. STRAIN AGAIN THROUGH A DOUBLE LAYER OF CHEESE CLOTH
SLOW COOKER BERRY COBBLER

- 1 cup flour
- 3 Tbsp. sugar
- 1 tsp. baking powder
- 1/4 tsp. cinnamon
- 1 egg
- 1/4 cup fat-free milk
- 2 Tbsp. canola oil
- 1/8 tsp. salt
- 2 cups raspberries
- 2 cups blueberries
- 1/2 Tbsp. lemon juice
- 1 cup sugar
- 1/4 cup flour

- 1/2 pound boneless, skinless chicken breasts, cooked or shrimp cooked
- 1 cup peas & carrots, frozen
- 1 white onion, chopped

- 2 eggs
- 3 tablespoons sesame oil
- 1/4 cup soy sauce
