Butter Frosting

Cream butter; gradually add about half the sugar, blending well
- 6 tbsp. butter
- 1 1-lb. package confectioners sugar, sifted (about 4 3/4 cups)
- Light cream (about 1/4 cup)
- 1 1/2 tsp. vanilla
Fried Spare Ribs

Sprinkle the seasonings on both sides of the ribs, rubbing them thoroughly into the meat

- 1/2 tsp. The Lady's Seasoned Salt
- 1 small slab pork ribs, 4-5 lbs
- 1 cup flour
- 6 cups vegetable oil
Chili Cheese Dip

1. Heat butter in a large skillet over medium-low heat
- 1 tbsp. butter
- 1 clove garlic, minced
- 1 large onion, finely chopped
- 1 (14 1/2 oz. ) can peeled whole tomatoes, drained
- 1 (4 oz. ) can chopped green chiles
- 1/8 tsp. cayenne pepper
- 12 oz. shredded cheddar cheese
- 1 (12 oz.) bag corn chips
SOPAPILLA CHEESECAKE

PREHEAT OVEN TO 350 DEGREES
- 2 CANS PILLSBURY BUTTER CRESCENT ROLLS (BUY THE SEAMLESS VERSION IF YOU CAN FIND THEM)
- 2 (8 OZ. )PACKAGES CREAM CHEESE (SOFTENED)
- 1 CUP SUGAR
- 1 TSP. VANILLA
- 1/4 CUP BUTTER (MELTED)
- CINNAMON AND SUGAR (I USED ABOUT 1/4 CUP SUGAR AND 1 TB. CINNAMON

Crunch-Top Potatoes

Melt butter in jelly-roll pan in 375 degree oven
- 1/3 cup butter
- 3 or 4 large baking potatoes, pared, cut in 1/2 in. slices
- 3/4 cup crushed corn flakes
- 1 1/2 cups shredded sharp cheese
- 2 tsp. salt
- 1 1/2 tsp. paprika

In a large bowl, combine the first 11 ingredients
- 3 cups cubed cooked chicken breast
- 1 can (15 oz.) black beans, rinsed and drained
- 1 medium tomato, seeded and finely chopped
- 1 can (4 oz. ) chopped green chilies
- 1/2 cup salsa
- 1/4 cup finely chopped onion
- 1/4 cup chopped sweet red pepper
- 1 tbsp. lime juice
- 1/2 tsp. ground cumin
- 1/2 tsp. seasoned salt
- 1/4 tsp. garlic powder
- 1 medium ripe avocado, peeled and finely chopped
- 1/2 cup sour cream
- 12 Bibb or Boston lettuce leaves
