- 1 TEA. CHILI POWDER
- 1/2 TEA. CUMIN
- 1/2 TEA. SMOKED PAPRIKA
- 1 CUP BEEF STOCK
- 1 TAB. TOMATO PASTE
- 1 CHIPOTLE PEPPER IN ADOBO SAUCE, MINCED
- 1/2 LARGE SWEET ONION, DICED
- 3 CLOVES GARLIC, MINCED
- FLOUR TORTILLAS
- FAVORITE TACO TOPPINGS- LETTUCE, TOMATO, ONION, AVOCADO, LIME CILANTRO ETC.
Peasant Pasta

Cook pasta according to package directions; drain and keep warm
- 8 oz. spiral pasta
- 1 lb. Italian sausage, cut into 1/2 inch slices
- 1 onion, chopped
- 1-3 cloves garlic, minced
- 1/2 cup chopped fresh parsley
- 1 cup chicken stock
- 1-2 (16 oz.) cans tomatoes
- 1 (10 oz.) package frozen peas, thawed
- 2 tsp. chopped fresh basil
- 1/2 cup grated parmesan cheese

- 6 tbsp. butter
- 2 (10.5 oz.) packages miniaure marshmallows
- 1/2 cup creamy peanut butter
- 2 tsp. vanilla extract
- 1 (12 oz.) box crispy rice cereal
- 3 ( 2 oz.) bottles colored sprinkles, divided
- 1 (16 oz.) package chocolate-flavored candy coating
- 4 tbsp. solid vegetable shortening
Cocktail Meatballs

1. Combine ground beef, 1/3 cup ketchup, bread crumbs, egg, onion flakes, garlic ssalt, and pepper
- 2 lbs. ground beef
- 1/3 cup ketchup
- 3 tsp. dry bread crumbs
- 1 egg, beaten
- 2 tsp. onion flakes
- 3/4 tsp. garlic salt
- 1/2 tsp. pepper
- 1 cup ketchup
- 1 cup packed brown sugar
- 6 oz. can tomato paste
- 1/4 cup soy sauce
- 1/4 cup cider vinegar
- 1-1 1/2 tsp. hot pepper sauce
Cowboy Beef Bake

1. Preheat oven to 300. Heat oil in a medium Dutch oven or other ovenproof pot over medium-high heat
- 1 tbsp. vegetable oil
- 1 1/2 lbs chuck steak, tenderized, cut into 1 inch cubes
- 3 cloves garlic, minced
- 2 large onions cut into wedges
- 2 green bell peppers, cut into chunks
- 1 red bell pepper, cut into chunks
- 1 jalapeno, deseeded, diced
- 1 (6 oz.) can tomato paste
- 1/4 cup water
- 1 tsp. salt
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 14 tsp. pepper
- 1 (16 oz.) can pinto beans
GRILLED ROMAINE SALAD

- 1/2 CUP OLIVE OIL
- 1 LEMON, JUICE & ZEST
- 1 TAB. OF ROSEMARY, MINCED
- 1 TEA. OF GARLIC, MINCED
- SEA SALT
- CRACKED PEPPER
- 2 SMALL-ISH HEADS OF ROMAINE( I used the pre-packaged hearts)
- 1 lemon, quartered
- 1/2 cup of parmesan cheese, fresh grated
- cherry tomatoes
Coleslaw

Toss first four ingredients together
- 4 cups cabbage leaves- thinly sliced
- 1 cup carrots--shredded
- 2 scallions--diced fine
- 4 radishes--diced medium
- 1/3 cup mayonnaise
- 2 tbsp. seasoned rice vinegar
- Salt and pepper
Daddy's Tangy Grilling Sauce

Mix ingredients together and simmer for 10 minutes
- 1 cup worcestershire sauce
- 4 tbsp. (1/2 stick) butter
- Juice of 2 lemons
Buttermilk-Batter Chicken

Roll chicken in flour and dip into butterilk, shake off excess and roll again in flour
- 1 chicken (3 lbs.) cut into 8 pieces
- 1 1/2 cups self rising flour
- 1 cup buttermilk
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. freshly grated nutmeg
- 2 cups vegetable shortening
