Combine all ingredients in a blender or food processor and puree until smooth
- 1/4 soy sauce
- 1/4 cup brown rice vinegar
- 6 tbsp. water
- 1 tbsp. maple syrup
- 1/2 tsp. salt
- 1 in. piece fresh ginger
- 1 cup peanut butter
- 2 tbsp. toasted sesame seed oil
- 1/2 tsp. paprika
- 1-2 tsp. hot pepper

Homestyle Chicken Noodle Soup/Pesto Pinwheels

In a large Dutch oven, melt butter over med-high heat
- 1/4 cup butter
- 3 medium carrots, thinly sliced
- 1 onion, chopped
- 1 cup thinly sliced celery
- 1 (8 oz.) package sliced baby bella mushrooms
- 3 qts. chicken broth
- 1 bay leaf
- 2 tsp. minced fresh thyme
- 1 tsp. salt
- 1/2 tsp. ground black pepper
- 2 cups shredded cooked chicken
- 2 cups uncooked wide egg noodles

- 1 (6 oz.) can sliced water chestnuts

- 4 small tomatoes, chopped
- One 3.8 oz. can sliced black olives, drained
- One 4 oz. can green chillies, chopped
- 4 green onions, white and green parts, chopped
- 1 package Good Seasons salad dressing mix, prepared according to package directions
- One 8 oz. package shredded Mexican cheese(Monterey Jack, Cheddar, and other mild cheeses combined; available in mot supermarkets in the dairy/cheese section)
- Corn chip scoops (like Fritos Scoops)
