Chicken or Shrimp Marinade

Mix all ingredients with a whisk
- 3 cloves garlic, crushed
- 1 1/2 tsp. salt
- 1/2 cup packed brown sugar
- 3 tbsp. mustard
- 1/4 cup apple cider vinegar
- 6 tbsp. olive oil
- juice of 1 lime
- juice of 1/2 lemon
- Dash of cayenne or black pepper
Greek Chicken Pasta

Cook pasta according to package directions
- 2 cups uncooked penne pasta
- 1/4 cup butter, cubed
- 1 lg. onion, chopped
- 1/4 cup flour
- 1 can (14 1/2 oz.) chicken broth
- 3 cups cubed rotisserie chicken
- 1 jar (7 1/2 oz.) marinated quartered artichoke hearts, drained
- 1 cup (4oz.) crumbled feta cheese
- 1/2 cup chopped oil-packed sun dried tomatoes or maybe fresh tomatoes
- 1/3 cup sliced black olives
- 2 tbsp. minced fresh parsley
Caramels

Melt butter in heavy 3 qt
- 1 cup butter
- 1 lb. (2 1/2 cups) brown sugar
- dash salt
- 1 cup light corn syrup
- 1 15 oz. can sweetened condensed milk
- 1 tsp. vanilla
Potato Casserole

Boil potatoes a day ahead
- 6 medium size potatoes (red)
- 1 pint sour cream
- 10 oz. can cream of chicken soup
- 1 1/2 cups grated cheese
- 1/4 cup soft butter
- Salt and pepper to taste
- 1 1/2 cups crumbled corn flakes
Peanut Butter Chocolate Sauce

In a medium saucepan, combine the milk, sugar, and chocolate
- One 13 oz. can evaporated milk
- 2 cups sugar
- 3 squares (3 oz.) unsweetened chocolate
- 1/2 cup creamy peanut butter
- 1 tsp. vanilla extract
Tangy Green Beans

Chop bacon and fry until crisp
- SAUCE:
- 3 slices bacon, chopped
- 1 onion, choppped
- 1/2 tsp. thyme
- 2-1 lb. cans cut green beans, drained
- 1 cup mayonnaise
- 1 heaping Tbsp. horseradish
- 1 tsp. Worcestershire
- 1/8 tsp. pepper
- 1/8 tsp. celery salt
- 1/8 tsp. onion powder
- 1/8 tsp. garlic powder
- 1 1/2 tsp parsley flakes
- juice of 1 lemon
Tartar Sauce

In a bowl, combine chopped onion, pickle, mayonnaise, and House Seasoning and mix well
- 1/2 cup chopped green onion
- 1/2 cup chopped dill pickle
- 1 cup mayonnaise
- 1/2 tsp. House Seasoning

- 1/2 cup worcestershire sauce
- 1/4 cup fresh lemon juice
- 1/4 cup ground pepper
- 2 tsp. Texas Pete Hot Sauce

- 1/2 cup packed dark brown sugar
- 3/4 cup dark corn syrup
- 1/3 cup cornstarch
- 4 egg yolks
- 1 1/2 cup half and half
- 1/8 tsp. salt
- 3 tbsp. butter
- 1 tsp. vanilla extract
Southern Corn Bread Stuffing

- 7 slices white bread (dried in warm oven)
- Corn Bread
- 1 sleeve saltine crackers
- 2 cups chopped celery
- 1 large onion, chopped
- 8 tbsp. (1 stick) butter
- 7 cups stock reserved from cooking hen
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 tsp. sage (optional)
- 1 tbsp. poultry seasoning(optional)
- 5 eggs, beaten
