Easy Corn Chowder

Place corn, potatoes, onion, and broth in 4-quart or larger slow cooker
- 2 cans (15 oz each) whole kernel corn, drained
- 3 potatoes, peeled and cut into 1/2" pieces
- 1 onion, chopped
- 2 C low-sodium chicken broth
- 2 C 1 percent milk
- 1/4 C trans-free margarine
Cornbread Salad

Mix all ingredients together and chill at least 2 hours for flavors to blend
- Pan of cornbread, baked, cooled, crumbled
- 1 green pepper, chopped fine
- 1 onion, chopped fine
- 3 tomatoes, chopped
- 2 eggs, hard boiled, chopped
- 1 cup whole kernel corn,drained
- 2 cups ham or bacon, cubed or chopped
- 1 pkg Ranch buttermilk dressing
Baked Fontina

Preheat the broiler and position the oven rack 5 inches from the heat
- 1 1/2 pounds Italian Fontina Val d'Aosta cheese, rind removed and 1-inch-diced
- 1/4 cup good olive oil
- 6 garlic cloves, thinly sliced
- 1 tablespoon minced fresh thyme leaves
- 1 teaspoon minced fresh rosemary leaves
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1 crusty French baguette
Honey-Garlic Pork Chops

In a large nonstick skillet coated with cooking spray, brown pork chops on both sides
- 4 bone-in pork loin chops (6 ounces each)
- 1/4 cup honey
- 1/4 cup lemon juice
- 2 tablespoons soy sauce
- 1 garlic clove, minced
EASIEST Peanut Butter Pie

Mix all your ingredients. Spoon into your crust
- Pick your pie crust. I use Oreo or chocolate
- Add 1 c PB
- Mix with 8oz. cream cheese (soft)
- Add 1 1/4 cup powered sugar
- Add 1 tub of whipped cream
Italian Beef

Rinse steak under cold water and pat dry with paper towels
- 1 1/2 pounds flank steak
- 1/2 cup light Italian salad dressing
- 1 1/2 cups tomato basil pasta sauce
- 1 tablespoon chopped garlic
- 1/4 cup Chianti red wine
- 1 teaspoon Italian seasoning
Caramelized Baked Chicken

Baking this chicken in the oven makes the sauce caramelize into an irresistible garlic-y sauce
- 2 1/2 pounds chicken legs or wings
- 1 2/3 tablespoons olive oil (to help it stop sticking to the pan)
- 1/2 cup soy sauce
- 1 2/3 tablespoons ketchup
- 3/4 cup honey
- 2 to 3 garlic cloves, minced
- salt and pepper (optional)
Pumpkin Pie Granola

1. In a large bowl, combine oats, pecans and coconut; set aside
- 4 cups old-fashioned oats
- 1/2 cup chopped pecans
- 3/4 cup shredded coconut such as Durkee Flaked Coconut
- 1/4 cup packed light brown sugar
- 2 tablespoons vegetable oil
- 1/4 cup honey
- 3 tablespoons pure maple syrup
- 1 1/2 teaspoons pumpkin pie spice
- 1 1/2 teaspoons pure vanilla extract
- 1/2 cup raisins
- 1/2 cup dried cranberries
Hot Dog Creole

- 1 pkg beef wieners, cut into bite-size pieces
- 1 can mexicorn
- 2 cups dried corkscrew noodles
- 1 small-medium onion, diced

- 3 cups fresh vegetable medley (broccoli, cauliflower, baby carrots)
- 1/2 cup Spanish olives, chopped

- 1/2 cup (1 stick)butter, softened
- 1/2 tsp garlic powder
- 3/4 cup Snack Factory Pretzel Crisps, crushed
