Creamy Stove Top Macaroni and Cheese (America's Test Kitchen)

This is different than any other I've seen posted
- 8 ounces macaroni, approximately 2 cups
- 2 teaspoons salt
- 2 large eggs (I only use 1 egg)
- 1 (12 ounce) can evaporated milk
- 1 teaspoon dry mustard, dissolved in 1 teaspoon water
- 1/4 teaspoon Tabasco sauce
- 1/4 teaspoon pepper
- 4 tablespoons unsalted butter
- 12 ounces cheddar cheese, shredded (3 cups)
Faux Cheese Sauce

- ◾1/4 c Nutritional Yeast
- ◾2 Tbsp rice flour* (wheat flour can be used instead)
- ◾1/4 tsp tumeric
- ◾1/2 tsp onion powder
- ◾1/2 tsp garlic powder
- ◾salt to taste (I used 1/2 tsp)
- ◾1/4 tsp cumin**
- ◾1/2 tsp chili powder**
- ◾1 c plant milk (I use rice or unsweetened almond milk)
- For a thicker sauce add extra flour.**These are optional but best used for a Mexican inspired flavor.
STUFFING MEATLOAF

Preheat oven 350°. Coat inside of bundt pan with cooking spray
- 1 package Stove Top Stuffing mix, dry
- 1 c. warm water
- 1 1/2 lbs. lean ground beef
- 2 eggs, slightly beaten
- 1 package onion soup mix
Becky's Blueberry Cake

To make the cake, preheat the oven to 350 degrees F
- CAKE:
- 4 cups fresh or frozen wild Maine blueberries (if frozen, do not thaw)
- 3 cups all-purpose flour, plus more for tossing with the blueberries
- 4 eggs, separated
- 2 1/4 cups sugar, divided
- 1 cup unsalted butter, at room temperature
- 1/2 teaspoon salt
- 2 teaspoons vanilla
- 2 teaspoons baking powder
- 2/3 cup milk
- CREAM CHEESE FROSTING:
- 1 cup unsalted butter, at room temperature
- 2 (8-ounce) packages cream cheese, at room temperature
- 1 tablespoon vanilla extract
- 3 to 3 1/2 cups confectioners’ sugar
- Grated rind of 1 orange (optional)
Creamy Wild Blueberry Pie

Roll out dough on floured work space and press into a tart pan
- prepared frozen, rolled pie crust or your favorite single crust recipe
- 5 cups frozen Wild Blueberries
- 3/4 cup sugar
- 3 tablespoons cornstarch
- 1 1/2 tablespoons lemon juice
- 1 cup low-fat sour cream

Place ingredients in the pan of the bread machine in the order recommended by the manufacturer
- 1 cup warm milk (110 degrees F/45 degrees C)
- 2 eggs, room temperature
- 1/3 cup margarine, melted

Top Round Beef Roast Recipe

Directions Pour 1/4 cup of oil in a roasting pan or dutch oven
- RUB:
- 2 1/2 pounds top round beef roast
- 1/4 cup olive oil
- 2 cups beef broth
- 1 tablespoon pepper
- 1 tablespoon barbecue seasoning powder (use regular seasoning salt instead)
- 1 tablespoon rosemary
- 1 teaspoon garlic salt
- 1/4 cup olive oil
Yummy Sauce

- 1 x 15 ounce can cannellini beans, rinsed and drained (or 1.5 cups of cooked beans)
- Juice and zest of one organic lemon (if the lemon does not yield 1/4 of a cup of juice, then add more lemon juice)
- 1/2 cup water
- 2 Tablespoons salt-free mustard (I use Westbrae Stoneground)
- 3/4 ounce pitted dates (approximately 3 deglet noor dates)
- 1 clove garlic
