Fresh or frozen Pea Soup Recipe

Saute the carrots and onions in the butter until tender, not browned, about 8 - 10 minutes
- 1 carrot, peeled and chopped
- 1 cup sliced white or yellow onion
- 3 cups of shredded lettuce (I use 1 small head of iceberg lettuce, entirely. We like the texture and its sweetness instead of using sugar)
- 3 Tbsp butter
- 3 cups chicken stock
- 2 cups water
- kosher salt
- 1 small bag of frozen peas OR 2 cups fresh peas shopping list
- Freshly ground pepper

Preheat oven to 350 degrees F (175 degrees C)
- 1 head cauliflower, cut into florets
- 8 slices turkey bacon
- 1 (8 ounce) package fat-free cream cheese, softened
- 1/2 cup reduced-fat sour cream
- 1/4 cup lowfat cottage cheese
- 1 1/2 cups shredded reduced-fat Cheddar cheese, divided

Crust: Mix all ingredients together and press into 10″ springform pan
- Filling:
- 1-1/4 cups graham cracker crumbs
- 1/4 cup sugar
- 6 tablespoons butter or margarine
- 3/4 teaspoon cinnamon
- 2 lbs. cream cheese (4-8oz. pkgs.)
- 1/4 teaspoon salt
