Melt butter in pan Add mixture of rest ingredients into pan Cook 375 degrees 30-35 minutes
- 2 pkgs Jiffy corn muffin mix
- 1 stick butter
- 1 egg
- small sour cream
- 1 can creamed corn
Tortilla Soup (FINE LIVING)

Preheat oven to 350 degrees F
- 2 tsp. whole cumin seed
- 1/4-tsp. chili flakes
- 1/2-cup diced onion
- 1-1/4 tsp. minced garlic
- 2 tsp. canola oil
- 2/3-cup canned diced tomatoes
- 2 tsp. lime juice
- 3/4-tsp. salt
- 5-1/2 cups chicken stock
- 1/2-cup Pico de Gallo (see recipe)
- 1/2-cup shredded low-fat cheddar cheese
- 1 corn tortilla, thinly sliced, about 1 ounce
- 4 tsp. fresh, chopped cilantro
Guacamole (FINE LIVING)

Steam spinach until wilted
- 1/2-cup julienned spinach
- 1/3-cup frozen peas
- 1 ounce lite tofu
- 1-1/2 Tbs. lemon juice
- pinch of salt
- pinch of cumin
- pinch of cayenne
- pinch of chili powder
- dash of Tabasco
- 6 Tbs. mashed avocado
- 3 Tbs. peeled and minced tomato
- 2 Tbs. pico de gallo (see recipe)
- 1 Tbs. minced cilantro
- 3 Tbs.minced white onions
- 2 tsp. chopped scallions
Curry Cous Cous

Bring water and butter to a boil
- 1-1/2 cups cous cous
- 1 TBS butter
- 1-1/2 cups water
- 1/2 cup plain yogurt
- 1/2 cup olive oil
- 2 tsp. white wine vinegar
- 2 tsp. curry
- 1/2 tsp. tumeric
- 2 tsp. kosher salt
- 1-1/2 tsp. pepper
- 1 cup grated carrots
- 1/2 cup chopped flat leaf parsley
- 1 cup craisins
- 1/2 cup blanched sliced almonds
- 4 chopped green onions
- 1/2 cup chopped red onion
Fiesta Shrimp

Peel and devein shrimp. In a bowl add shrimp, olive oil and 1/2 TBS Creole seasoning and toss to coat shrimp
- 1 LB unpeeled large fresh shrimp
- 1 TBS olive oil
- 1 TBS Creole seasoning, divided
- 1/2 large red pepper, chopped
- 1 15 oz can corn, drained
- 1 cup grated Mexican blend cheese
- 2 TBS cilantro, chopped
- 1 15 oz can black beans, drained

Jam Thumbprint Cookies

Preheat the oven to 350 degrees F
- 3/4 pound (3 sticks) unsalted butter, at room temperature
- 1 cup sugar
- 1 teaspoon pure vanilla extract
- 3 1/2 cups all-purpose flour
- 1/4 teaspoon kosher salt
- 1 egg beaten with 1 tablespoon water, for egg wash
- 7 ounces sweetened flaked coconut
- Raspberry and/or apricot jam
Maryland Crab Soup

Saute the carrot and onion in a stock pot
- 2 TBS oil
- 1 carrot, diced
- 1 medium onion, diced
- 3 cups chicken broth
- 3 cups beef broth
- 3 - 4 cups diced potatoes
- 3 - 4 cups diced tomatoes (fresh or canned)
- 2 tsp Old Bay seasoning
- 1 lb. crabmeat
- 2 TBS chopped parsley

In a small saucepan, combine the brown sugar, butter and corn syrup
- 1 cup packed brown sugar
- 1/2 cup butter, cubed
- 2 tablespoons corn syrup
- 1 can (29 ounces) sliced peaches, drained
- 1 loaf (1 pound) day-old French bread, cubed
- 1 package (8 ounces) cream cheese, cubed
- 12 eggs
- 1-1/2 cups half-and-half cream
- 1 teaspoon Spice Island® Pure Vanilla Extract

- 3 tablespoons olive oil, divided
- 3 tablespoons fresh lemon juice, divided
- 1/4 cup dry white wine
- 1/2 cup crumbled feta cheese, divided
- 2 tablespoons minced shallots
- 2 tablespoons chopped fresh basil
- salt and freshly ground black pepper
- 4 6-8-ounce halibut fillets
- Snapper or grouper

- for halibut.
Mediterranean Orzo

Cook the orzo according to package directions, omitting salt and fat
- 1 cup uncooked orzo (rice shaped pasta- 8 oz.)
- 2 cups bagged prewashed bay spinach, chopped- (I did not chop it)
- 1/2 cup chopped drained oil-packed sun dried tomato halves
- 3 tablespoons red onion
- 3 tablespoons chopped pitted kalamata olives
- 1/2 teaspoons freshly ground black pepper
- 1/4 teaspoon salt- check first, depends on feta

- 3/4 cup- 3 ounces- feta cheese, crumbled and divided- (I just added it all to the mix)
