Blueberry Pudding

Preheat oven to 325 degrees
- 1 pint blueberries
- 1/4 cup corn starch
- 1 cup sugar
- dash of salt
- pinch of cinnamon
- 1/2 tsp lemon juice
- 1 box yellow cake mix
- 1 can crushed pineapple, drained, reserving juice
- 1-1/2 sticks butter, melted
- 1 cup chopped pecans
Butternut Bisque

1.In a large saucepan, heat butter over medium
- 3 tablespoons butter
- 1 medium onion, coarsely chopped
- 2 garlic cloves, sliced
- 1/2 teaspoon dried thyme
- 1/4 teaspoon ground cinnamon
- 1/8 to 1/4 teaspoon cayenne pepper, plus more for garnish (optional)
- Coarse salt
- 1 large butternut squash (about 4 pounds), peeled, seeded, and cut into 1-inch cubes
- 1 can (14 1/2 ounces) reduced-sodium chicken broth
- 1 cup half-and-half
- 1 tablespoon fresh lemon juice
- Sour cream, for serving
Broccoli Casserole

- This is a make the night before recipe. I don't use any meat in mine, but it's so much easier to include the meat rather than frying bacon/sausage.
- 6 slices white bread, cubed
- 1 lb cubed ham, bacon or sausage
- 1/2 lb sharp cheddar, grated
- 2 TBS green (or red/yellow/orange) pepper, chopped
- 4 eggs, beaten
