Mediterranean Rice Salad

Use medium saucepan to bring 2 ½ c
- 3 cups fat free chicken broth, divided use
- 1 1/2 cups long grain rice
- 1/4 cup lemon juice
- 1 TBSP olive oil
- 1/2 TSP salt
- 2 cloves garlic, mashed
- 1 TBSP fresh oregano, minced or 1/2 TBSP dried
- 1/4 TSP ground black pepper
- 1/8 to 1/4 TSP red pepper flakes
- 2 cups chopped fresh spinach leaves
- 1 red bell pepper, finely chopped
- 1 small cucumber, peeled, seeded, and finely chopped
- 1/2 cup chopped green onion
- 1/4 cup chopped kalamata olives
- 1/2 cup crumbled feta cheese
Ratatouille, canned

Ratatouille – Pat Brown styleMakes approx
- 3 large onions, chopped
- 3 green peppers, chopped (I substitute red/yellow/green for more color)
- 5 cloves garlic, minced
- 1/2 to 3/4 cup oil
- 3 medium eggplant, peeled & cubed
- 5 medium zucchini, chopped
- 3 yellow squash, chopped
- 6 tomatoes, peeled & chopped (I used plum tomatoes & eyeballed how many)
- 1 tsp salt
- 1 tsp pepper
- 1 tsp oregano
- 3 tbs parsley
- 2 tsp basil
- 2 large cans tomato sauce; rinse cans & add the water from rinsing
- Sugar (optional to taste)
Mexican Chicken

Boil chicken breasts. Cool and chop meat
- 4 to 6 boneless skinless chicken breasts
- 1 15 oz. can cream of mushroom soup
- 1 can Rotel tomatoes
- 1 medium onion, chopped
- 1 tsp chili powder
- 12 corn tortillas, torn in pieces
- Shredded cheddar cheese

- 1 tsp. dill

- 3 tbs soft butter

- 1/2 c milk
- 1 small pkg instant vanilla pudding
Pot Roast Beef Stew

Adjust an oven rack to middle position and heat the oven to 300 degrees
- 1 boneless chuck-eye roast (3 1/2 pounds), patted dry with paper towels Salt and ground black pepper
- 2 TBS vegetable oil
- 1 med onion, chopped medium
- 1 sm carrot, chopped medium (I put more carrots in sliced on an angle since it was a stew)
- 1 sm celery rib, chopped medium
- 10 oz white button mushrooms, quartered
- 2 med garlic cloves, minced or pressed (about 2 tsp)
- 2 tsp sugar
- 1 tsp thyme
- 1/2 cup low-sodium chicken broth
- 1/2 cup low-sodium beef broth
- 1/2 cup dry red wine
- 1 (14.5 oz) can diced tomatoes w/juices
- 1 to 1 1/2 cups water
Pumpkin Bread

Preheat oven to 350. Mix all dry ingredients; add remaining ingredients and mix well
- 3-1/2 cups flour
- 1-1/2 tsp salt
- 3 cups sugar
- 1 cup vegetable oil
- 1 tsp nutmeg
- 4 eggs
- 1 tsp cinnamon
- 2 cups (1 can) canned pumpkin
- 1/2 tsp baking powder
- 1/2 cup walnuts or pecans, chopped
- 1 tsp allspice
- 2 tsp baking soda
Spinach Feta Strata Recipe

In a greased 13-in. x 9-in
- 10 slices French bread (1 inch thick) or 6 croissants, split
- 6 eggs
- 1-1/2 cups milk
- 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon pepper
- 1-1/2 cups (6 ounces) shredded Monterey Jack cheese
- 1 cup (4 ounces) crumbled feta cheese
Pumpkin Soup

Melt butter. Cook onion until soft
- 16 oz. can pumpkin
- 2 TBS butter
- 1 medium onion, chopped
- 2-1/2 cups chicken broth
- 1 can cream of chicken soup
- 1/4 tsp paprika
- Salt and pepper to taste
- 2/3 cup half & half
Red Beans and Rice (Slow Cooker)

Combine all ingredients in slow cooker
- 6 CUPS WATER
- 1 LB. DRIED RED KIDNEY BEANS
- 1 LARGE ONION, chopped
- 1 LARGE RED PEPPER, chopped
- 6 STALKS CELERY, chopped
- 1 tsp DRIED THYME
- GROUND RED PEPPER, to taste
- 1 tsp BLACK PEPPER
- 1 (14 oz) PKG SMOKED TURKEY KIELBASA, cut in bite size pieces
- 4 - 6 links CHICKEN ANDOUILLE SAUSAGE, cut in bite size pieces
- 2 BAY LEAVES
- 2 - 3 TBS GARLIC, minced (more if you really like garlic!)
