Use medium saucepan to bring 2 ½ c

  • 3 cups fat free chicken broth, divided use
  • 1 1/2 cups long grain rice
  • 1/4 cup lemon juice
  • 1 TBSP olive oil
  • 1/2 TSP salt
  • 2 cloves garlic, mashed
  • 1 TBSP fresh oregano, minced or 1/2 TBSP dried
  • 1/4 TSP ground black pepper
  • 1/8 to 1/4 TSP red pepper flakes
  • 2 cups chopped fresh spinach leaves
  • 1 red bell pepper, finely chopped
  • 1 small cucumber, peeled, seeded, and finely chopped
  • 1/2 cup chopped green onion
  • 1/4 cup chopped kalamata olives
  • 1/2 cup crumbled feta cheese

  • 3 large onions, chopped
  • 3 green peppers, chopped (I substitute red/yellow/green for more color)
  • 5 cloves garlic, minced
  • 1/2 to 3/4 cup oil
  • 3 medium eggplant, peeled & cubed
  • 5 medium zucchini, chopped
  • 3 yellow squash, chopped
  • 6 tomatoes, peeled & chopped (I used plum tomatoes & eyeballed how many)
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp oregano
  • 3 tbs parsley
  • 2 tsp basil
  • 2 large cans tomato sauce; rinse cans & add the water from rinsing
  • Sugar (optional to taste)
