Ingredients

  • 1-½

    cups cous cous

  • 1

    TBS butter

  • 1-½

    cups water

  • ½

    cup plain yogurt

  • ½

    cup olive oil

  • 2

    tsp. white wine vinegar

  • 2

    tsp. curry

  • ½

    tsp. tumeric

  • 2

    tsp. kosher salt

  • 1-½

    tsp. pepper

  • 1

    cup grated carrots

  • ½

    cup chopped flat leaf parsley

  • 1

    cup craisins

  • ½

    cup blanched sliced almonds

  • 4

    chopped green onions

  • ½

    cup chopped red onion

Directions

Bring water and butter to a boil. Add cous cous. Cover and remove from heat. Let stand for 5 minutes. In a large bowl, flake cous cous with a fork to separate. Whisk together yogurt, olive oil, vinegar, curry, tumeric, salt and pepper. Mix into cous cous. Add remainder of ingredients and mix well. NOTE: For a complete meal, add chicken, shrimp, etc.
