Fiesta Shrimp

Ingredients
- 1 LB unpeeled large fresh shrimp
- 1 TBS olive oil
- 1 TBS Creole seasoning, divided
- 1/2 large red pepper, chopped
- 1 15 oz can corn, drained
- 1 cup grated Mexican blend cheese
- 2 TBS cilantro, chopped
- 1 15 oz can black beans, drained
- hot cooked rice

Preparation
Step 1
Peel and devein shrimp.
In a bowl add shrimp, olive oil and 1/2 TBS Creole seasoning and toss to coat shrimp. Place in bottom of “Pammed” 9 X13 pan.
On top of shrimp sprinkle red pepper, corn, cheese and cilantro. Top with black beans and remaining 1/2 TBS Creole seasoning.
Cover pan with lid or aluminum foil.
Place pan in a 375 degrees oven and bake for 35-45 minutes or until shrimp are done. Serve over hot rice.
