Ingredients

  • 1

    LB unpeeled large fresh shrimp

  • 1

    TBS olive oil

  • 1

    TBS Creole seasoning, divided

  • ½

    large red pepper, chopped

  • 1

    15 oz can corn, drained

  • 1

    cup grated Mexican blend cheese

  • 2

    TBS cilantro, chopped

  • 1

    15 oz can black beans, drained

  • hot cooked rice

Directions

Peel and devein shrimp. In a bowl add shrimp, olive oil and 1/2 TBS Creole seasoning and toss to coat shrimp. Place in bottom of “Pammed” 9 X13 pan. On top of shrimp sprinkle red pepper, corn, cheese and cilantro. Top with black beans and remaining 1/2 TBS Creole seasoning. Cover pan with lid or aluminum foil. Place pan in a 375 degrees oven and bake for 35-45 minutes or until shrimp are done. Serve over hot rice. SERVES 4
