Spinach and Tomato Strata Recipe

In a skillet, cook spinach and garlic in oil until liquid evaporates
- 1 package (10 ounces) frozen chopped spinach, thawed
- 3 garlic cloves, minced
- 1 tablespoon olive oil
- 2 cans (14-1/2 ounces each) Hunt’s® Original Diced Tomatoes, undrained
- 1 loaf (1 pound) French bread, cut into 1/2-inch slices
- 6 slices Swiss cheese
- 1/2 cup chopped onion
- 3/4 cup crumbled feta cheese
- 6 eggs
- 2 cups milk
- Salt and pepper to taste
- Grated Parmesan cheese
Turkey Burgers

Mix together all ingredients
- 1 LB. GROUND TURKEY BREAST
- 2 tsp CUMIN
- 1-1/2 tsp CORIANDER
- ZEST and JUICE of 1 LIME
- 3 GREEN ONIONS, finely chopped (white and green)
- 1-1/2 TBS OLIVE OIL
- Salt and pepper to taste
BACON QUICHE BISCUIT CUPS

Heat oven to 375°F. Spray 10 regular-size muffin cups with CRISCO® Original No-Stick Cooking Spray
- 5slices bacon
- 1package (8 oz) cream cheese, softened
- 2tablespoons milk
- 2Eggland's Best eggs
- 1/2cup shredded Swiss cheese (2 oz)
- 2tablespoons chopped green onions (2 medium)
- 1can (12 oz) Pillsbury® Grands!® Jr. Golden Layers® refrigerated biscuits

- 3/4 teaspoon Old Bay seasoning
- 1/4 teaspoon seasoned pepper
- 8 green leaf lettuce leaves (optional) $
- Assorted crackers (optional) $
White Bean Chili

Heat oil and saute onions
- 2 TBS vegetable oil
- 1 medium onion, chopped
- 1- 4 oz. can chopped green chilies
- 2 tsp garlic powder
- 2 tsp salt
- 2 tsp cumin
- 2 tsp oregano
- 1/4 tsp cayenne pepper
- 3-4 15 oz. cans northern beans (DO NOT DRAIN)
- 1 lb. chopped cooked chicken breast
- 2 cans chicken broth
Peanut Chicken

Preheat oven to 375. Combine all sauce ingredients with 1/2 cup hot water to mix
- 1/2 c peanut butter
- 1/4 c tomato chili sauce
- 1/4 c soy sauce
- 1 TBS vegetable oil
- 1 TBS hot asian oil
- 2 TBS rice vinegar
- 4 cloves garlic, minced
- 2 tsp fresh ginger, minced
- 1/4 tsp cayenne
- 4 boneless, skinless chicken breasts

In a blender, combine the first six ingredients; cover and process until smooth

- 1/2 cup milk
- 1 egg
- 1 tablespoon canola oil
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 24 fresh asparagus spears, trimmed
- 8 thin slices deli ham
- 8 slices Swiss cheese
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 teaspoon chicken bouillon granules
- 1 cup water
- 1/4 cup shredded cheddar cheese
- 1/3 cup half-and-half cream
- 1 can (4 ounces) mushroom stems and pieces, drained
- 1 tablespoon minced chives
California BLTs

- 6 thick-cut slices smoked bacon
- 4 slices good white bread, cut 1/2-inch thick
- 4 tablespoons good mayonnaise (recommended: Hellman's)
- 4 to 8 tender green lettuce leaves, washed and spun very dry
- 1 ripe Hass avocado
- 1/2 lemon, juiced
- 1 large ripe tomato, sliced 1/2-inch thick
- Kosher salt and freshly ground black pepper
