Preheat the oven to 425 degrees F
- Softened butter for greasing pans, plus 1 1/2 tablespoons unsalted butter, melted
- 1 1/2 cups all-purpose flour, sifted
- 3/4 teaspoon kosher salt
- 1 teaspoon chopped fresh thyme leaves
- 3 extra-large eggs, at room temperature
- 1 1/2 cups whole milk, at room temperature

- 1 can chicken broth
- 2-3 cans Navy or Northern beans, or Combo, undrained
- 1 can Rotel tomatoes, undrained*
- 2 small cans of chopped green chilies, undrained
- 1 can black beans DRAINED and rinsed
- 1/2 c. frozen corn (I used roasted corn from Trader Joe’s)
- 1 pkg. McCormick’s White Chicken Chili Mix (found in Mexican food or gravy/mix section)
Braised Short Ribs

Heat oil in a dutch oven or large, heavy covered pot over high heat
- • 2 tablespoons vegetable oil
- • 21/2 pounds short ribs, cut into individual ribs
- • 2 tablespoons Creole seasoning
- • 1 cup chopped onions
- » 1/2 cup chopped celery
- t 1/2 cup chopped carrot
- » 1 cup peeled, seeded and chopped fresh or canned tomatoes
- » 2 tablespoons chopped garlic
- • 1/2 cup red wine vinegar
- • 2 tablespoons Worcestershire sauce
- • 3 bay leaves
- • 2 teaspoons black pepper
- • 2 quarts beef broth
- • 1/4 cup chopped scallion (green part only), for sprinkling
Overnight Asparagus Strata Recipe

In a large saucepan, bring 8 cups water to a boil
- 1 pound fresh asparagus, trimmed and cut into 1-inch pieces
- 4 English muffins, split and toasted
- 2 cups (8 ounces) shredded Colby-Monterey Jack cheese, divided
- 1 cup cubed fully cooked ham
- 1/2 cup chopped sweet red pepper
- 8 eggs
- 2 cups whole milk
- 1 teaspoon salt
- 1 teaspoon ground mustard
- 1/4 teaspoon pepper
Tropical Pork Roast with Black Beans

Serves 6
- 1 orange , preferably sour orange, sliced into thick rounds
- 2 teaspoons crushed cumin cumin seed
- 2 teaspoons dried dried oregano
- 5 cloves garlic , crushed under a knife
- 1/2 cup fresh orange fresh orange juice
- 1/2 cup fresh lime fresh lime juice
- 1 (3-pound) boneless boneless pork butt roast
- 2 tablespoons extra-virgin olive extra-virgin olive oil
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped green green bell pepper
- 1 teaspoon ground ground cumin
- 1 teaspoon dried dried oregano
- 2 cloves garlic , minced
- 3/4 cup chicken chicken broth or canned low-sodium low-sodium broth
- 3 Roma or plum plum tomatoes , seeded and chopped into 1/2-inch dice
- 3 cans (15 ounces) black black beans , drained and rinsed
- Salt and freshly ground black black pepper

Broccoli Slaw

Combine orange juice, vinegar and shallots in bowl you'll be serving slaw in
- •1/3 cup orange juice, about 1/2 an orange
- •1/3 cup rice vinegar
- •2 teaspoons minced shallot
- •Coarse salt
- •1 tablespoon dark sesame oil
- •1 tablespoon grated ginger
- •1 teaspoon Coleman's mustard
- •1 (10 ounce) bag broccoli slaw
Spinach Salad (Ina Garten)

A light and refreshing salad with baby spinach, thinly sliced onions, toasted nuts and homemade dressing
- DRESSING:
- 2 bags baby spinach
- Red onion, thinly sliced
- 1 package craisins
- Feta cheese, crumbled
- Toasted pine nuts or pecans
- 1/2 cup white vinegar
- 1 cup sugar
- 1 cup vegetable oil
- 1 tablespoon tarragon vinegar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- Paprika to taste
Keno Dressing

- 1/2 cup sugar
- 1 tsp grated onion
- 1 tsp dry mustard
- 1 tsp salt
- 1/3 cup cider vinegar
- 1 cup veg. oil
- 1 tsp poppy seeds
- 1 tsp sesame seeds
Texas Potatos

Preheat oven to 350. Thaw potatoes completely
- 1 1-lb bag Ore-Ida Southern Style Hash Browns (square potatoes)
- 1 cup shredded cheddar cheese
- 1 small (8 oz) container sour cream (or plain yogurt)
- 1 stick butter, melted
- 1 can cream of mushroom (or cream of celery/potato/chicken) soup
- 1/2 - 1 cup chopped onion
- salt and pepper to taste
