Veal Saltimboca

Lay each veal scallop (or chicken cutlet) on a slice of prosciutto
- 4 large veal scallops pounded thin
- 4 slices prosciutto
- 1 t dried sage (or minced fresh sage)
- 4 heaping t grated parmasen cheese
- 1 egg
- 1 cup flour
- 3/4 stick butter (1 stick = 1/2 cup)
- 1/2 cup marsala
- 1/2 cup white wine
- 1 cup beef broth
- 4 sundried tomatoes, cut into strips (optional)
- 8 mushrooms, sliced and fried (optional)
Potato Soup

Fry bacon and remove from pan
- 6 - 8 pieces of bacon, crumbled
- 6 tsp. bacon drippings
- 2 TBS (heaping) flour
- 2 cups milk
- 6 potatoes, chopped
- 1 medium onion, chopped
- 2 stalks celery with leaves, chopped
- 1 tsp celery salt
- Parsley
- Salt and pepper to taste
Grilled Corn

We usually soak the corn in salt water for several hours to get the shucks moist
- 6 corn on the cob, unshucked
- 1 cup melted butter or olive oil
- 1 tsp. dried dill
- 1 tsp. brown sugar
- 1/2 tsp. garlic powder
- fresh ground pepper

- 1 cup peanut butter, crunchy is best
- 1/4 cup finely chopped unsalted peanuts
- 1/4 cup sesame oil
- 1/4 teaspoon thyme
- 1/8 teaspoon ground cloves
- 2 teaspoons fresh garlic, minced
- 3 tablespoons soy sauce
- 1/2 cup dark brown sugar, packed
- Salt and pepper to taste
Hush Puppies

Mix all of the dry ingredients in a bowl
- 2 cups yellow corn meal
- 1 cup plain flour
- 2 eggs
- 1 1/2 cup buttermilk
- 1/2 cup cream
- 3/4 cup of thawed white or yellow corn
- 3/4 teaspoon seasoned salt.
- 1/2 teaspoon ground pepper
- 1 teaspoon baking powder
- 2/3 teaspoon baking soda
- 2 tablespoons brown sugar
- 1/8 cup bacon grease.
- Oil for deep frying

Smoked Salmon Dip

1. In bowl finely flake salmon; add onion, horseradish, and sour cream
- 4 oz. smoked salmon, skin and bones removed, or lox-style salmon
- 1/3 cup finely chopped red onion
- 1 to 2 1 to 2 Tbsp. prepared horseradish
- 1 8-oz. carton dairy sour cream or whipped cream cheese
- Salt and ground black pepper
- Snipped fresh chives, cucumber slice
- Assorted vegetable dippers
Artichoke Shrimp Bake

- TOPPING:
- 1 pound cooked medium shrimp, peeled and deveined
- 1 can (14 ounces) water-packed quartered artichoke hearts, rinsed, drained and quartered
- 2/3 cup frozen pearl onions, thawed
- 2 cups sliced fresh mushrooms
- 1 small sweet red pepper, chopped
- 2 tablespoons butter
- 1 can (10-3/4 ounces) condensed cream of shrimp soup, undiluted
- 1/2 cup sour cream
- 1/4 cup sherry or chicken broth
- 2 teaspoons Worcestershire sauce
- 1 teaspoon grated lemon peel
- 1/8 teaspoon white pepper
- 1/2 cup soft bread crumbs
