- 1 Can whole kernel corn
- 1 Can creamed corn
- 1 stick margarine, melted

New Orleans-Style Barbecue Shrimp

In a medium saucepan, bring 2 1/4 cups salted water to a boil
- Coarse salt
- 1 1/2 cups long-grain white rice
- 2 tablespoons unsalted butter
- 1 large celery stalk, diced small ( 3/4 cup)
- 1 small bunch scallions, white and green parts separated and thinly sliced
- 2 garlic cloves, thinly sliced
- 2 teaspoons Creole seasoning
- 1/2 cup Worcestershire sauce
- 1 large lemon, sliced into 1/4-inch-thick rounds
- 1 3/4 pounds shell-on extra-large shrimp, deveined

Cod fillets, pistachio crusted

Preheat oven to 425 degrees
- 4 cod fillets (about 6 ounces each), or other firm white fish
- Coarse salt and ground pepper
- 1/2 cup shelled, unsalted pistachios
- 1/2 cup packed fresh parsley
- 1 garlic clove
- 3 tablespoons olive oil
- Lemon wedges, for serving
Toffee Chocolate Squares

Preheat oven to 350 degrees
- 13 graham crackers
- 1 bag (8 ounces) toffee bits
- 1 1/2 cups coarsely chopped toasted natural almonds
- 1/2 cup sugar
- 1 cup (2 sticks) unsalted butter
- 3/4 cup (4 ounces) bittersweet chocolate, chopped, or chocolate chips
- 3/4 teaspoon coarse salt
Halloween Chex Mix

Prep Mix Chex and nuts in large roasting pan
- 2 sticks butter
- 1 C brown sugar
- 1/2 C Light corn syrup
- 1 TBSP vanilla
- 16 oz Corn Chex (it now comes in 14 oz boxes, so that's what I used)
- 16 oz Wheat Chex " " "
- 2 C Honey roasted nuts (I can't eat peanuts so I added salted Deluxe Mixed Nuts, leaving out the Brazil nuts)
- 2 C Candy Corn
- Another recipe I saw called for Betty Crocker orange and black candy decor - which I thought would be cute, but I couldn't find them, so I added orange and brown mini and regular M&Ms.
3-bean Salad (Splenda)

DIRECTIONS 1. COMBINE all ingredients in a medium size mixing bowl

Cut up string cheese, dip in skim milk, then Italian bread crumbs
- Cut up string cheese, dip in skim milk, then Italian bread crumbs.
- Bake at 425 for 7-10 minutes.
- Yummy Dipped in Marinara Sauce!!!
Marbled Orange Fudge

- 12 drops yellow food coloring
- 9 drops red food coloring
Spinach-Parmesan Chicken Rolls

- 6 (6 oz.) chicken breasts
- 1 bunch fresh spinach
- 8 oz. grated parmesan cheese
- 1/2 cup sundried tomatoes
- 3 cloves garlic
- 2 shallots
- 2 tablespoons olive oil
- Salt & pepper to taste
- Handful basil leaves for garnish

- 1 3/4 C sifted flour
- 1/2 tsp soda
- 1/2 tsp salt
- 1 C mashed bananas
- 1/2 C chopped nuts
