Place the tomatoes in the bowl of a food processor and process until smooth
- 2 (28-ounce) cans whole peeled tomatoes
- 1/4 cup extra-virgin olive oil, plus more for serving (optional)

- 1 tablespoon chopped fresh oregano
- Coarse salt and ground pepper
- Cooked pasta, for serving (optional)
- Parmesan cheese, for serving (optional)

Mexican Lasagne

Brown the ground beef in a large skillet, stirring until crumbly, and drain
- 1 1/2 pounds lean ground beef
- 2 tablespoons chili powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 to 1 teaspoon cumin (or to taste)
- 1 (15-ounce) can stewed tomatoes
- 1 egg
- 2 cups cottage cheese
- 1 teaspoon garlic powder
- 1 1/2 cups shredded Monterey Jack cheese
- 1 (10- to 12-count) package corn tortillas
- 1 1/2 cups shredded cheddar cheese
- Shredded lettuce
- Chopped fresh tomatoes
- Sliced black olives
- Chopped onion
- Jalapeno peppers

Preheat oven to 350. Remove 1 tablespoon of the gelatin powder and set aside to use for the icing later on

- 1 (3 ounce) boxes fruit flavored gelatin, divided ( jello)
- 1 cup butter or 1 cup margarine, softened
- 1 cup powdered sugar
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt

- 3 tablespoons very hot water
- 2 cups powdered sugar

Basil Tomato Feta Bruschetta

HEAT broiler. BROIL bread slices 2 to 3 min
- loaf (1 lb.) French bread, cut into 36 slices
- 2 Tbsp. oil
- 7 plum tomatoes, chopped (about 2-1/2 cups)
- 1 pkg. (4 oz.) ATHENOS Crumbled Feta Cheese with Basil & Tomato, finely chopped
- 1/2 cup finely chopped red onions
- 3 Tbsp. chopped fresh parsley
- 1 Tbsp. chopped black olives
- 1/4 tsp. pepper
