Spicy Baked Pork Chops

Directions 1.In a shallow nonmetal dish, combine the orange juice, garlic, soy sauce, and oil
- 1 cup orange juice
- 3 cloves garlic, minced
- 2 tablespoons reduced-sodium soy sauceadd to shopping list
- 1 teaspoon olive oil
- 4 pork loin chops, trimmed of fat
- 1 cup dry bread crumbs
- 2 teaspoons dried thyme
- 2 teaspoons paprika
- 1/2 teaspoon ground red pepper
- 1/4 teaspoon ground black pepper
Mini Peach Cobbler

Made in muffin tins
- Preheat oven to 350˚F.
- 1 cup sugar
- 1 cup flour
- 2 tsp baking powder
- a dash of salt
- 3/4 cup milk
- 1 stick of melted butter
- brown sugar
- cinnamon
- 1 can diced peaches
- Put 1 tsp of melted butter into each regular size muffin tin.
- Combine the first 5 ingredients by hand… sugar, flour, baking powder, salt and milk.
- Put 2 tbsp of batter into each regular size muffin tin… on top of the melted butter.
- Then put 1 tbsp diced peaches on top of the batter.
- Sprinkle with brown sugar and then cinnamon. I do a pretty generous “sprinkle”.
- Bake the regular size muffin tins for 12 minutes.
- Let them cool almost completely before taking out of pan.
- Don't forget a dollop of vanilla ice cream...YUM!

- 3 teaspoon oil, olive, extra-virgin, divided
- 2 large shallot(s), finely chopped
- 1 tablespoon flour, all-purpose
- 1/2 cup(s) wine, dry white
- 14 ounce(s) broth, chicken, less sodium
- 1/3 cup(s) sour cream, reduced-fat, organic
- 1 tablespoon mustard, Dijon
- 1/2 cup(s) chives, fresh, organic, chopped, (about 1 bunch)
Sausage and Cabbage Casserole

- 11.Preheat the oven to 350 degrees. Coat a large rimmed baking sheet with cooking spray.
- 33.Spread the fruit spread over the dough, then top with the sliced apples, arranged in a single layer.
- 44.In a small bowl, combine the sugar and cinnamon. Sprinkle over the apples. Bake for 20 to 25 minutes, or until the edges are golden.

- 1/2 teaspoon dried thyme

- 1 1/2 pounds red new potatoes, sliced 1 inch thick
- 1 1/2 pounds skirt steak, cut into 4 equal pieces
- 2 tablespoons red-wine vinegar
- 1 teaspoon Dijon mustard
- 2 bunches watercress (about 12 ounces total), thick ends removed

- 1 Cup boiling water 1 cup
- 1 Cup yellow cornmeal 1 cup
- 1/4 Cup milk 1/4 cup
- 1/2 Cupfrozen whole kernel corn 1/2 cup
- 1 egg, slightly beaten 1
- 1 TBLS fresh chives, snipped 1 tbsp

Comfort Bake

1. Mix your eggs and milk in a large bowl
- 5 eggs (go for cage free, vegetarian fed – no beak-less chickens here!)
- 1/4 cup milk
- 16 oz refrigerated breakfast biscuits (I used the Pillsbury flakey kind)
- 4 scallions (green onions, spring onions, whatever you prefer to call them)
- 1 cup shredded extra sharp cheddar cheese
- If you’re into the meats – cooked center cut bacon or cooked sausage
- 11 ×17 pan, sprayed with cooking spray (Note: I think a 9×13 works better, but might need to bake a little longer)
