Zucchini, Corn Casserole

Preparation 1. Preheat oven to 350°
- 1 1/2 pounds yellow squash, cut into 1/4-inch-thick slices
- 1 1/2 pounds zucchini, cut into 1/4-inch-thick slices
- 1/4 cup butter, divided
- 2 cups diced sweet onion
- 2 garlic cloves, minced
- 3 cups fresh corn kernels
- 1 1/2 cups (6 oz.) freshly shredded white Cheddar cheese
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 2 large eggs, lightly beaten
- 2 teaspoons freshly ground black pepper
- 1 teaspoon table salt
- 1 1/2 cups soft, fresh breadcrumbs, divided
- 1 cup freshly grated Asiago cheese, divided

- 3/4 C Dark Karo syrup
- 1 C sugar
- 2 TBLS vinegar
- 2 TBLS boiling water

Asian Salmon and Noodles

1) Heat sesame oil in a large frying pan on medium-high heat
- 2 tablespoons sesame oil
- 5 green onions, chopped
- 1 tablespoon sesame seeds
- 7-10 regular button mushrooms, sliced, or 1 Portobello mushroom, sliced
- 1/4 cup soy sauce
- 1/4 cup honey
- 1/4 cup chicken stock
- 1 teaspoon Sriracha sauce (substitute with any other hot sauce if you don’t have Sriracha)
- 60 snow peas, ends trimmed (sorry, I didn’t have a scale, so I counted them :)). I think it’s about 2 or 3 cups
- 1/2 lb pasta, preferably Fettuccine (half a pound)
Veggie Burgers w/ Aioli sauce

Martha's Directions 1. In a large bowl, combine bulgur and 1 cup boiling water

Preparation 1. Process first 7 ingredients in a food processor 30 seconds or until thoroughly blended
- .1 (16-oz.) container low-fat plain Greek yogurt
- 1/4 cup olive oil
- 1 tablespoon chopped fresh dill
- 1 tablespoon lemon juice
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground pepper
