Rigatoni with Sausage and Peppers

Delicious served with a crisp, green salad
- 12 oz tube pasta such as rigatoni, penne or ziti
- 1 T EVOO
- 1/2 lc precooked, low-fat smoked sausage, cut into 1/2" thick slices
- 1 c chopped green bell pepper
- 1 c chopped onion
- 16-oz jar marinara sauce
- Optional garnishes: chopped flat-leaf parsley, grated Parmesan cheese
Split Pea Soup (Vegetarian)

Mom's specialty
- 1 lb (2.5c) green split peas
- 1.5 c sliced onion
- 1/4 t dried marjoram, crushed
- 1 c diced celery
- 1 c diced carrots
- 1 t salt
- 1/2 t pepper
Couscous Salad with Grilled Squash, Feta, and Mint

1. Put couscous in a heatproof bowl & add 1
- 1 c couscous
- 1 garlic clove, minced
- 1 jalapeno, seeded & thinly sliced
- EVOO
- 1/4 c rice vinegar
- 1/4 c chopped mint
- 1/2 t salt
- 1/4 t pepper
- 4 yellow squash (6ozs each), halved lengthwise
- 2 c watercress
- 1/4 c crumbled feta
- 10 sliced scallions
Parsley and Mint Pesto

Can be made in a food processor: simply combine the ingredients and blend 20-30 seconds to a coarse paste
- 1/2 c blanched whole almonds
- 1 small clove garlic, peeled
- 1/2 t kosher salt
- 1 c packed fresh Italian parsley leaves
- 1/2 c fresh mint leaves
- 1/2 c fresh basil leaves
- 1/3 c EVOO, plus more for storing
- 1.5 T crumbled ricotta salata
- 1/4 t freshly ground pepper
Port Vinaigrette

1. In a 1-qt saucepan, bring the port to a boil
- 1 c port
- 2 cloves garlic
- 1/4 c sherry vinegar
- 1/4 c balsamic vinegar
- 1 T tomato paste
- 3/4 t salt
- 3/4 t freshly ground black pepper
- 3/4 c EVOO
- 3/4 c canola oil
- 1/4 c finely chopped shallots or red onion
