- 2 quarts chicken/turkey broth
- 3 cups water
- 1 whole head garlic
- 1 Tbsp. tomato paste
- 1 whole clove
Mango Couscous

Prepare couscous according to package directions
- 1 cup couscous
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 mango, peeled, pitted and cut into 1-inch cubes (about 1 cup)
- 1 jalapeno chili, seeds and ribs removed, finely chopped
- 1/2 cup raisins
- 1 ripe tomato, chopped
- Juice of 1 lime (about 2 tablespoons)
- 1/4 cup cilantro sprigs, chopped
- 1/4 cup parsley sprigs, chopped
- 1/2 teaspoon salt, plus more to taste
Mini Burgers with Gorgonzola and Special Sauce

1. Heat grill. In small bowl, combine Thousand Island dressing, barbecue sauce & red onion; set aside
- 1 c prepared Thousand Island dressing
- 2 T prepared barbecued sauce
- 2 T minced red onion
- 3 lbs ground beef filet
- 2 t salt
- 1/2 t pepper
- 3 T EVOO
- 1 c crumbled gorgonzola cheese
- 2 pkgs (12 buns each) mini potato rolls, toasted
- 2 bunches arugula leaves, trimmed
- 12 cherry tomatoes, sliced
- 12 cornichons, sliced
Swiss Chard and Cheddar Quiche

1. Cook Swiss chard & onion in a lg skillet over med high heat until tender, 3-4 min
- 1 bunch Swiss chard (chopped)
- 1 onion, chopped
- EVOO
- 3 lg eggs
- 3/4 c half-and-half
- Salt & pepper
- 1/2 c grated Cheddar
- 1 pre-baked 9" piecrust
White Wine Sangria with Summer Peaches, Strawberries, Oranges and Lemons

- 1 pint strawberries , hulled and halved lengthwise
- 2 oranges , sliced into 1/4-inch-thick rings
- 2 lemons , sliced into 1/4-inch-thick rings
- 3 peaches , pitted and cut into 8 wedges
- 3 bottles white wine (dry to semidry), such as Pinot Grigio or Chardonnay
- 1 liter sparkling water
- Ice
Apple Pie Undone

- 6 Tbsp. plus 1 cup sugar
- 4 Tbsp. flour
- Perfect Pie Dough get the recipe
- 3 pounds crisp apples , such as Braeburn or Granny Smith
- Juice of 1 lemon
- 1 tsp. cinnamon , plus more for garnish (optional)
- 1/2 tsp. fresh grated nutmeg
- 1/4 tsp. salt
- 3 Tbsp. butter
Arugula and Walnut Pesto

Can be made in a food processor: simply combine the ingredients and blend 20-30 seconds to a coarse paste
- 1 small clove garlic, peeled
- 1/2 t kosher salt
- 1/2 c walnuts
- 2 c packed fresh arugula leaves
- 1/2 c packed fresh basil leaves
- 1/3 c EVOO, plus more for storing
- 2 T grated Parmesan cheese
- 1 T fresh lemon juice
Peach & Pecan Flip Cake

- 4 T (1/2 stick) butter
- 4 firm peaches, peeled, pits removed, and cut into 1/4" slices
- Zest & juice of 1 orange
- 1 t fresh ginger, grated & peeled
- 1/2 vanilla bean, scraped (use seeds only)
- 1 c granulated sugar
- 3/4 c pecans, toasted & coarsely chopped
- Cake batter (recipe follows)
- FOR CAKE BATTER
- 1/2 c (1 stick) unsalted butter, softened
- 1/2 c packed light brown sugar
- 1/2 c granulated sugar
- 1/2 vanilla bean (use seeds only)
- 1 t ground cinnamon
- 3 eggs, at room temperature
- 2 T buttermilk
- 1 1/4 c all-purpose flour
