Spicy Chipotle Meatballs with Rice

Weeknight Meals Tip: The meatballs and sauce can be cooked up to 2 days in advance; combine & refrigerate, covered
- 1 T EVOO
- 1 med onion, diced
- 6 cloves garlic, finely chopped
- 1 28oz can whole tomatoes
- 2-3 t chopped canned chipotle chiles in adobo sauce
- 1 c long grain white rice
- 1.5 lbs ground beef chuck
- 1/2 c chopped fresh cilantro, plus more for serving
- 1/4 c bread crumbs
- 1 lg egg, beaten
- 1 t ground cumin
- Kosher salt & black pepper
Morning Biscuits with Cheddar Cheese, Dill, and Pumpkin Seeds

1. Heat oven to 375F, w/a rack in the middle position
- 4 T (1/2 stick) cold butter, cut into pieces, plus more for pan
- 2 c unbleached all-purpose flour
- 2 t baking powder
- 3/4 t salt
- 1 c grated cheddar cheese
- 2 scallions, thinly sliced
- 1 T chopped fresh dill
- 1.25 c whole milk
- 2 T raw pumpkin seeds

- 4 cups (12 ounces) trimmed haricots verts
- 2 Tbsp. balsamic vinegar
- 1 Tbsp. finely chopped shallots
- 1/2 Tbsp. whole grain mustard
- 1/4 cup good-quality extra-virgin olive oil
- 1 1/2 tsp. hazelnut oil
- 1 Tbsp. chopped chives
- 1 Tbsp. plus 1/4 tsp. salt
- 1/4 tsp. freshly ground pepper
- 2 Tbsp. blanched hazelnuts toasted and coarsely chopped
Blueberry-Peach Potpie

- 1 (1lb.) bag frozen peaches, lightly thawed & chopped

- 1/2 c sugar
- 1/4 t ground nutmeg
- 1/2 t vanilla extract
- 3 T unsalted butter, cold & cut into cubes
- 1 egg mixed w/1T water, for egg wash
- Sugar cube, crushed for dusting
