  • 4 tablespoons extra-virgin olive oil
  • 2 medium carrots , peeled and cut into 1-inch chunks
  • 1 medium sweet potato , skinned and cut into 1-inch chunks
  • 6 tablespoons honey
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 tablespoon lemon juice
  • 1/4 cup chicken broth
  • 1 medium onion , coarsely chopped
  • 4 cloves garlic , skinned and mashed
  • 1/4 cup white raisins
  • 1/4 cup toasted almonds
  • Sprigs of fresh cilantro for garnish
  • 1 cup couscous
