Butternut Squash Bisque

- 1 medium butternut squash (about 2 pounds)
- 1 tablespoon olive oil
- 1 yellow onion , cut in half and thinly sliced
- 1 stalk celery , thinly sliced
- 1 carrot , thinly sliced
- 1 teaspoon fresh rosemary leaves
- 2 cups chicken or vegetable stock
- 3/4 cup milk or cream
- 1 1/2 teaspoons kosher salt
- 1/4 teaspoon freshly ground pepper
Carrot Cake with Soy Cream Cheese Frosting

- 2 1/2 cups all-purpose flour, plus more for dusting
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 1/4 teaspoon ground nutmeg
- 2 teaspoons ground cinnamon
- 2 teaspoons baking soda
- 4 large eggs
- 1/2 cup honey, slightly warmed
- 1 cup light brown sugar , firmly packed
- 1 cup vegetable oil
- 1 cup crushed pineapple (fresh or canned), plus 1/4 cup juice
- 1 tablespoon vanilla extract
- 3 cups shredded carrots, loosely packed
- 1 cup chopped walnuts
- 1 cup shredded coconut, preferably unsweetened
- 1 cup raisins
- 2 containers (8 ounces) soy cream cheese, chilled
- 3/4 cup light brown sugar , firmly packed

Tandoori Style [Turkey] Wings

1. Cut 4 slashes into each turkey leg, cutting deeply but not to the bone
- 2 whole turkey wings
- 1 lemon, halved
- 1 c yogurt
- 2-3 serrano or other med-hot chilies, seeded & chopped
- 5 cloves garlic
- 2 " piece fresh ginger, peeled & sliced
- 1 T Whole Spice Mix or 1t garam masala
- 1 t ground turmeric
- 1/4 t ground cinnamon
- 1.25 t salt
- 1/2 red onion, thinly sliced, for serving

Combine marmalade, vinegar, EVOO, & thyme
- 1/3 c orange marmalade
- 2 T red wine vinegar
- 2 T EVOO
- 2 t fresh thyme leaves, chopped
Hearty Turkey Noodle Soup

Heat oil in a large pot over medium high heat
- Ingredients
- 1 tablespoon extra virgin olive oil
- 2 cloves garlic, thinly sliced
- 1 yellow onion, chopped
- 2 teaspoons chopped thyme
- 3 1/2 to 4 cups low-sodium chicken or vegetable broth
- 2 cups baby spinach
- 2 cups cubed or shredded turkey or chicken
- 1 1/2 cups uncooked wide egg noodles
- 1 (15-ounce) can cannellini beans, drained
- 1 (14.5-ounce) can sliced carrots, drained
- Salt and pepper to taste

Caper Parsley Tapenade

- 1/3 c EVOO
- 1/3 c fresh flat-leaf parsley leaves, chopped
- 1/4 c olive tapenade
- 1/2 finely chopped shallot
- 1 t chopped capers
