Quinoa Salad with Orange and Pistachio

Ingredients

  • 1/2 t grated orange zest
  • 3 T freshly squeezed orange juice
  • 2 T + 1T vegetable oil
  • 1 T white wine vinegar
  • 3/4 t sesame oil
  • 1/2 t salt, divided
  • 1/4 t pepper
  • 4 c broccoli
  • 1/2 red bell pepper, diced
  • 2 T water
  • 2 t soy sauce
  • 3 c cooked quinoa
  • Sections & juice of 1 navel orange
  • 1/4 c chopped pistachios

Preparation

Step 1

1. In a bowl, mix the orange zest, orange juice, both oils, vinegar, & 1/4t each of salt & pepper.
2. In a large skillet, heat the 1T vegetable oil over med heat.
3. Add broccoli, red bell pepper, 1/4t salt, & water. Cook, covered, stirring until crisp-tender, 2 min.
4. Drizzle w/soy sauce.
5. Transfer to a lg bowl & toss w/quinoa, navel orange, pistachios, & dressing.
