Strawberry Sour Cream Muffins

Ingredients

  • 2 eggs
  • 1 cup sour cream
  • 1 cup sugar
  • 1/2 cup melted butter
  • 1 tsp. vanilla
  • 2 cups flour, plus extra for dusting strawberries
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 cup fresh strawberries, coarsely chopped
  • 2 tsp. coarse sugar for sprinkling

Preparation

Step 1

In a large bowl, combine melted butter, sour cream, eggs, vanilla and sugar and mix thoroughly.

In a separate bowl, combine flour, baking powder, baking soda and salt.
Sift the dry ingredients into the wet mixture and mix.

Dust chopped strawberries with flour; this will prevent them from sinking to the bottom of the muffins while baking.

Add strawberries into the muffin mix and stir gently to combine. Divide mixture into 12 muffin tins sprayed with nonstick cooking spray. Sprinkle coarse sugar on top of each muffin. Bake for about 25 minutes in an oven heated to 350 degrees.
