Sides (Honey Sweet Corn)

There’s nothing that says summer quite like fresh sweet corn, and honey butter makes these ears even sweeter
- 6 medium ears sweet corn
- 1/4 cup butter, melted
- 1 teaspoon honey
- Ground pepper, optional

For the ShaSha sauce: 1) In a food processor, puree the peppers, garlic, mustard and vinegar
- For the Slaw:
- 1/2 head napa cabbage, shredded
- 1/2 clove garlic, minced
- 1/2 small red onion, thinly sliced
- 1/2 fresh jalapeno pepper, minced
- 3 tablespoons champagne vinegar
- 1 tablespoon dijon mustard
- 2 tablespoons mayonnaise
- 1 tablespoon sugar
- 1 1/2 teaspoons salt
- 1 tablespoon Worcestershire sauce
- 1 tablespoon ShaSha Sauce (below)
- For the Burgers:
- 1/2 pound ground sirloin
- 1/2 pound ground brisket
- 1/2 pound ground boneless short rib (or use 1 1/2 pounds ground beef total, 75% to 80% lean)
- Salt and freshly ground black pepper
- 1/2 pound pastrami, thinly sliced
- 4 slices Swiss cheese, medium thick
- 1 1/2 tablespoons unsalted butter, melted
- 4 brioche or egg buns, split
- ShaSha Sauce:
- 12 hot banana peppers from a jar, tops removed, chopped
- 4 cloves garlic
- 1 cup yellow mustard
- 1 cup white wine vinegar
- 1/2 cup sugar
- 2 tablespoons all-purpose flour

1) RINSE RICE. Process tomatoes in food processor until smooth; set aside
- 1 (14.5-ounce) can diced tomatoes
- 1 1/2 cups long-grain white rice
- 1/4 cup vegetable oil
- 1 onion, chopped fine
- 1 poblano chile, seeded and chopped fine
- 2 jalapeno chiles, seeded and chopped fine
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 1/2 cups low-sodium chicken broth
- Salt

1) Place pork, potatoes,onions, chiles and corn into 4 1/2 quart slow cooker
- 1 1/2 pounds boneless pork shoulder, cut into 1-inch cubes
- 2 medium baking potatoes, peeled and cut into large chunks
- 1 cup chopped onion
- 1 can (4 oz) diced green chiles
- 1 cup frozen corn
- 2 tsp sugar
- 2 tsp cumin or chili powder
- 1 tsp dried oregano
- 1 jar (16 oz) salsa verde (green salsa)
- Hot cooked rice
- 1/4 cup chopped fresh cilantro

A two-step cooking process yields potatoes that are tender on the inside and crispy on the outside
- 3 lb. baby Yukon Gold potatoes, each 1 to 2 inches each in diameter
- Sea salt, to taste
- 1/4 cup olive oil, plus more as needed
- 1 fresh rosemary sprig plus 1/2 tsp. chopped rosemary
- 2 Tbs. unsalted butter
- Freshly ground pepper, to taste
- 1/2 tsp. chopped fresh thyme
- 2 tsp. chopped fresh flat-leaf parsley

- 1/2 teaspoon chopped fresh rosemary
- 3 tablespoons extra-virgin olive oil
- 1 pound ground veal or turkey
- Kosher salt and freshly ground pepper
- 1 28-ounce can crushed tomatoes
- 1/2 cup whole milk
- 12 ounces fettuccine
