Sides (Cauliflower Croquettes with Peppadew Aioli)

To make the aioli: Place garlic, lemon juice, zest, and egg yolks in a blender or food processor
- For the Croquettes:
- 3 cups milk
- Salt and freshly cracked black pepper
- 2 cups cauliflower florets
- 2 tablespoons butter
- 3 eggs
- 1/2 cup grated Parmesan
- 2 tablespoons freshly chopped parsley leaves
- 1/2 teaspoon grated nutmeg
- 2 cups panko bread crumbs
- 1 cup all-purpose flour
- 3 cups vegetable oil, for frying
- For the Aioli:
- 3 cloves garlic
- 1 lemon, zested and juiced
- 4 egg yolks
- 3/4 to 1 cup olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon freshly cracked black pepper
- 1/2 cup drained and roughly chopped peppadews
