Asparagus with Pimentos

- 1 pound fresh asparagus, trimmed
- 1/4 cup dry bread crumbs
- 3 T butter
- 2 T grated Parmesan cheese
- 2 T chopped pimentos

Beet Salad with Oranges and Feta Cheese

Preheat oven to 375º. Scrub beets, pat dry, rub with 1 T olive oil, and sprinkle generously with salt
- 4 beets (2 1/2 in, wide, with root ends and stem ends intact), preferably different colors
- 5 T extra-virgin olive oil, divided

- 4 medium oranges
- 2 limes
- 2 T finely chopped shallots

Gorgonzola-stuffed Pork Chops with Pears

- 4 boneless pork chops (about 6 oz each)
- 2 oz gorgonzola dolce cheese, cut into 4 chunks

Cowboy Casserole

This is a great hearty meal developed by Barbara, my mother in law
- 2 1/2 pounds lean chuck stew meat, cubed
- 3 T flour
- 3 T oil
- 3/4 cup dry red wine
- 1 1/2 cup boiling water
- 3 medium onions, cut in large pieces
- 3 medium carrots, cut in large pieces
- 1 pound whole small mushrooms
- 3 - 4 cloves of garlic
- 1/2 tsp marjoram
- 1/2 tsp oregano
- 1/2 tsp sage
- 1 tsp thyme
- 3 T fresh chopped parsley
- 1 tsp peppercorns
- salt to taste
Chocolate Cherry Cordials

- For cookies:
- 1/2 cup butter, softened
- 1 cup sugar
- 1 egg
- 1 tsp rum extract
- 1 1/2 cups flour
- 1/2 cup cocoa powder
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- 30 maraschino cherries, drained and patted dry with paper towels
- 2 T sugar, for coating
- For glaze:
- 1 cup confectioner's sugar
- 1 tsp rum extract
- 4 tsp maraschino cherry juice
Black Bean and Sweet Potato Chili

- 2 T olive oil
- 2 1/2 cups chopped onions
- 3 garlic cloves, pressed
- 2 1/2 cups 1/2-inch pieces peeled sweet potatoes
- 2 T chili powder
- 2 tsp ground cumin

- 3 15 oz cans black beans, rinsed, drained
- 2 1/2 cups chicken or vegetable broth
- 1 14 1/2 oz can diced tomatoes in juice
