- 1 lb lean (at least 80%) ground beef
- 1/4 cup chopped onion
- I cup plain bread crumbs
- 1/2 tsp dried sage leaves
- 1/2 tsp salt
- 1 egg
- 1 package (1 lb, 8 oz) refrigerated garlic mashed potatoes
- 1 cup shredded cheddar cheese (4 oz)
- 1/4 chopped fresh tomato, if desired
- 2 slices precooked bacon, if desired
- 2 medium green onions, shopped (2 T)
Slow-Cooked White Chicken Chili

- 2 pounds skinless, boneless chicken breast halves, cubed
- 2 large onions, chopped
- 3 garlic cloves, minced
- 3 T vegetable oil
- 3 3/4 cups water
- 3 (15 ounce) can white kidney or cannelloni beans, rinsed and drained
- 3 (11 ounce) cans whole kernel corn, drained
- 3 (4 ounce) cans chopped green chilies

- 1 1/2 tsp sea salt, divided
- 1 1/2 tsp black pepper, divided
- 1/2 cup all-purpose flour
- 1 egg, lightly beaten
- 1 cup cashew clusters (from Costco), finely chopped (or you can use plain cashews)
- 1 1/2 cups heavy cream
- 1/2 cup pesto sauce
- 1/4 cup grated parmesan cheese
- 1/4 cup coconut oil

Grilled Fish Tacos with Slaw and Salsa

This is a great fish taco with fresh chile-lime slaw and avocado-tomatillo salsa
- CHILI-LIME SLAW
- 2 1/2 cups each shredded red cabbage and shredded green cabbage (each about 1/4 of a medium cabbage (or bag of mixed cabbage)
- 1 cup cilantro, roughly chopped
- 1/2 jalapeño chile, stemmed, seeded and minced
- Juice of 3 large limes
- 1/4 tsp pepper
- AVOCADO-TOMATILLO SALSA
- 1 lb. tomatillos, peeled and quartered
- 1/4 yellow onion, sliced
- 1 jalapeño chile, stemmed, halved and seeded
- 1 ripe avocado, pitted and peeled
- 1 cup cilantro leaves and tender stems
- 1/2 tsp fine sea salt
- 1/4 tsp pepper
- FISH
- 1 1/2 tsp each ground coriander, ground cumin, and Hungarian sweet paprika
- 1 lb rock cod filets, cut into 1 1/2 in. chunks
- 1/4 tsp each fine sea salt and pepper
- 2 T canola or vegetable oil
- 8 corn tortillas (6 inches) homemade or store-bought
- 1 shallot, finely chopped
- 1 jalapeño chile, stemmed, seeded and minced

Orange Arugula Salad

- 2-3 cups of arugula greens
- 1 large naval orange, skinned and white pith removed
- 1 avocado
- 1/4 cup minced red onion
- 3 T extra virgin olive oil
- 2 T rice wine vinegar (I substituted cranberry balsamic vinegar)
- 1 T honey
- Sant and pepper to taste
