Flourless Chocolate Cake

- 7 oz really good (45-50% cocoa) semisweet chocolate
- 2/4 cup butter
- 1 cup sugar, divided
- 4 eggs, separated
Jim's Chuck Wagon Pepper Steak (Flank Steak)

- 1 large flank steak
- 2 tsp unseasoned meat tenderizer
- 2 T instant minced onion
- 2 tsp thyme
- 1 tsp marjoram
- 1 bay leaf, crushed
- 1 cup red wine vinegar
- 1/2 cup olive or salad oil
- 3 T lemon juice
- 1/4 cup peppercorns coarsely crushed, or 1 T bottled cracked pepper (add to marinade)

- 1 - 5 oz. jar dried beef, chopped fine

Tuna Salad - Best Ever!

1. MARINATE TUNA: Place tuna in fine-mesh strainer and press dry with paper towels
- 3 5-oz. cans solid white albacore tuna packed in water
- 1/4 cup minced onion
- 2 T olive oil
- 2 tsp lemon juice

- 1/2 cup plus 2 T mayonnaise
- 1 celery rib, chopped fine
