Slow Cooker Pepper Steak

Cherry tomatoes are stirred in just before serving to add a burst of freshness to this Asian-style one-dish meal
- 1 pound boneless top round steak, all visible fat discarded, cut into thin strips
- 2 cups fat-free, low-sodium beef broth
- 1 medium red bell pepper, cut into 1-inch strips
- 1 medium green bell pepper, cut into 1-inch strips
- 1/2 medium onion, cut into 1-inch strips
- 2 T soy sauce
- 1 tsp toasted sesame oil
- 1 cup uncooked instant brown rice
- 1 cup cherry tomatoes, whole or halved
Sunrise Breakfast Casserole

Easy to make and even easier to eat!
- 2 packages (12 oz. each) sausage links
- 9 eggs
- 3 cups milk
- 1 1/2 tsp ground mustard or 1 T Dijon mustard
- 1 tsp salt
- 1/2 tsp pepper
- 1 package (30 oz) frozen hash browns, thawed
- 2 cups (8 oz) shredded Mexican blend cheese
- 1/2 cup chopped red/yellow bell peppers
- 1/2 cup sliced green onions
- Additional shredded Mexican blend cheese, optional
- Salsa, optional
Jim's Chuck Wagon Pepper Steak (Flank Steak)

This is a family favorite and was always requested by my late brother, Jim
- 1 large flank steak
- 2 tsp unseasoned meat tenderizer
- 2 T instant minced onion
- 2 tsp thyme
- 1 tsp marjoram
- 1 bay leaf, crushed
- 1 cup red wine vinegar
- 1/2 cup olive or salad oil
- 3 T lemon juice
- 1/4 cup peppercorns coarsely crushed, or 1 T bottled cracked pepper (add to marinade)
Seared Scallops with Pan sauce

- 3 T butter
- 1 T olive oil
- 1 1/2 pounds sea scallops
- salt and freshly ground pepper
- 1 T minced garlic
- juice of 1 lemon
- 1/2 cup dry white wine or water, or more as needed
- 2 T chopped fresh chives

- 10 large eggs, soft scrambled
- 1 teaspoon sea of kosher salt
- 1- 4oz can diced green chilies

Mushroom Wild Rice Bake

- 1 cup uncooked wild rice
- 2 cups boiling water
- 1 pound sliced fresh mushrooms
- 1 medium onion, chopped
- 2 tablespoons butter
- 3/4 cup uncooked long grain rice
- 1/2 cup sliced almonds
- 3 cups chicken broth
- 1-1/2 cups heavy whipping cream
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 3 tablespoons grated Parmesan cheese
Wild Alaska Salmon Ceviche

Peruvian Ceviche with a twist
- 1 T chopped garlic
- 1 pound skinless salmon
- 1 cup diced fresh tomato
- 1 cup peeled, seeded and diced cucumber
- 3/4 finely diced jalapeño, or to taste
- 1/4 cup finely diced red onion
- 1/4 cup chopped fresh cilantro
- 1/2 lime juice
- 1/2 cup lemon juice
- 1 T ketchup
- Taro chips or tortilla chips, for serving
Blackened Mahi Mahi Tacos with Kiwi Nectarine Salsa

SALSA In a medium bowl, combine all ingredients
- KIWI NECTARINE SALSA
- 3 kiwi, peeled and chopped
- 2 nectarines, peeled, pitted and chopped
- 1/2 jalapeno, stemmed, seeded and diced
- 1/2 red onion, peeled and diced
- 1/2 cup cilantro, finely chopped
- 1 clove garlic, peeled and minced
- 2 limes, juiced
- Salt and freshly ground pepper
- FISH TACOS
- 4 6-onces Mahi Mahi fillets
- 4 tablespoons olive oil, divided
- Salt, freshly ground pepper, garlic powder
- cumin, and cayenne pepper
- 8 6-inch corn tortillas
- 1 cup shredded purple cabbage
- 1 lime, cut into wedges
