Broccoli Casserole

Drain cooked broccoli. Combine soup, mayo, eggs, onion, salt and pepper
- 2 boxes frozen chopped broccoli
- 1 c. mayo
- 1 c. grated sharp cheese
- 1/2 stick margarine
- salt & pepper to taste
- 1 can mushroom soup
- 2 eggs, well-beaten
- 1 medium onion, chopped
- 1/2 package Pepperidge Farm stuffing
Marinated Broccoli

- 2 bunches broccoli
- 1 bottle Italian Good Seasons Dressing
- orange juice
Beth's Green Bean Salad

Cook beans in an 8 quart stockpot of rapidly boiling water just until crisp tender; drain
- 2 lbs. fresh green beans, trimmed
- 1/4 c. finely minced shallots
- 3 TBSP. balsamic vinegar
- 1/4 c. extra virgin olive oil
- 1 tsp. sugar
- 2/3 c. chopped fresh basil leaves
- 1/2 c. grated parmesan cheese
- freshly ground pepper

Cut chicken into strips; crush cheese nips to which you have added salt and pepper to taste
- 4 boneless, skinless chicken breasts
- 1 box of Cheese Nips
- Melted butter

Roasted New Potato Salad

Place oil in a 15x10" jellyroll pan; add potatoes and the next 4 ingredients, tossing to coat
- 2 TBSP. olive oil
- 2 lbs. small red potatoes, diced
- 1/2 medium-size sweet onion, chopped
- 2 tsp. minced garlic
- 1 tsp. coarse salt
- 1/2 tsp. ground pepper
- 8-10 cooked, crisp bacon slices, crumbled
- 1 bunch green onions, chopped
- 3/4 c. prepared Ranch dressing
- Salt and pepper to taste
