Creamy Broccoli Bake

1.Preheat oven to 350 degrees
- 2 (12 oz.) packages fresh broccoli florets
- 1 TBSP. salt
- 2 TBSP. butter
- 2 TBSP. all-purpose flour
- 1 1/2 cups milk
- 1 (3 oz.) package cream cheese, softened
- 1 (4 oz.) package crumbled blue cheese
- 1/4 tsp. salt
- 1/3 c. finely crushed saltine crackers (about 10 crackers)
Delicious Gravy

Combine flour and milk, beating until smooth; or shake the mixture in a tightly-capped jar
- 1 cup clear broth (beef or chicken)
- 1/4 cup skimmed milk
- 2 TBSP. flour
- Season with garlic powder or onion powder
Roast Beef Sandwiches with Sweet and Sour Red Onions and Blue Cheese

Combine onions, vinegar, and sugar in medium bowl; sprinkle with salt and pepper
- 2 c. thinly sliced red onions
- 2 TBSP. red wine vinegar
- 1 tsp. sugar
- 4 large soft whole grain rolls, toasted
- 1/2 c. crumbled blue cheese
- 12 tomato slices
- 8 oz. thinly sliced roast beef
- 2 c. (packed) small watercress sprigs
A Gallon of Bloody Mary's

Mix together all ingredients
- 1 (48 oz.) can of tomato juice
- 2 (48 oz.) cans of V-8 juice
- lime juice ( a little)
- salt and pepper to taste
- celery salt to taste
- lots of tabasco sauce
- Worcestershire sauce to taste
- 1 liter Vodka
- Mix together all ingredients.
Spinach Dip

Stir all ingredients until well-mixed
- 1 c. mayo
- 1 1/2 c. sour cream
- 1 pkg. (10 oz.) frozen, chopped spinach, thawed, drained
- 1 pkg. (1.4 oz.) Knorr vegetable soup and recipe mix
- 1 can (8 oz.) water chestnuts, drained, chopped
- 3 green onions, chopped
Peanut Butter Fruit Dip

Mix together well. Serve with apple slices, bananas, and strawberries
- 1/2 cup peanut butter
- 1 cup non-fat vanilla yogurt

Rich Chicken Broth

Rinse chicken quarters and necks under cold water and place in an 11 quart stockpot
- 2 chickens (3-4 lbs. each), quartered, with necks reserved
- 3 medium yellow onions (about 1 1/2 lbs.), unpeeled
- 4 medium carrots, scrubbed
- 4 ribs of celery, washed
- 2 bay leaves
- 10 black peppercorns
- 1/2 bunch fresh dill (about 24 large sprigs)

- 5 Idaho/russet potatoes
- 3 TBSP. white truffle oil
- 2 TBSP. salt
- 1 TBSP. garlic salt

Combine vegetables. Combine sugar, vinegar, salt, celery seed, mustard, pepper
- 1 medium head of cabbage, shredded
- 1 small onion,chopped
- 1 green pepper,chopped
- 6 stuffed olives, sliced
- 1/2 cup sugar
- 1/2 cup white vinegar
- 1 tsp.salt
- 1 tsp. celery seed
- 1 tsp. prepared mustard
- 1/8 tsp. black pepper
- 3 0r 4 stalks of celery, chopped
Old Southern Biscuits

Cut shortening into flour with a pastry blender or fork until crumbly
- 1/4 c. vegetable shortening (solid)
- 2 c. self-rising flour
- 1 c. buttermilk
- Melted better (optional)
