Paula Deen's Hot Chicken Salad

I doubled the recipe. Can be frozen
- 2 lg. chicken breasts
- 2 c. diced celery
- 1 c. slivered almonds
- 1 tsp. salt
- 1 tsp. pepper
- 4 TBSP. fresh lemon juice
- 2 c. mayo
- 2 c. grated Sharp Cheddar
- 1 1/3 c. crushed potato chips
Corn Pudding

Preheat oven to 450 degrees
- 3 eggs, beaten lightly
- 1 pint whole milk
- 1 TBSP. plus 1 tsp. sugar
- 1 tsp. salt
- 1 TBSP. plus 1 tsp. butter or margarine, melted
- 3/4 cup corn, cut from the cob (1 1/2 ears), or canned or frozen
- Chopped green chili to taste (optional)
- Chopped onion to taste{optional)
- Grated cheese to taste (optional)
- Paprika to taste (optional)
VICHYSSOISE

Cut tops off leeks, using only white and pale green parts
- 2-3 leeks, washed and sliced (1 1/2 c.)
- 3 TBSP. butter
- 2 potatoes, peeled and sliced (1 1/2 c.)
- 3 1/2 c. chicken stock or broth
- 1/2 tsp. white pepper
- salt to taste
- 3/4 c. heavy cream
- 1/2 tsp. fresh chopped chives
Grilled T-Bone Steaks with Parmesan

Melt 6 TBSP. butter in large saucepan over medium-high heat
- 8 TBSP. (1 stick) butter
- 2 lg. shallots, finely chopped (about 2/3 cup)
- 2 lg. garlic cloves, minced
- 2 tsp. chopped fresh sage
- 1/4 tsp. dried crushed red pepper
- 2 tsp. fresh lemon juice
- 4 10-12 oz. T-Bone steaks (each about 1/2-3/4" thick)
- Parmesan cheese shavings
Southwestern Chicken Drumettes

Combine breadcrumbs, crushed corn chips, and taco seasoning mix
- 2/3 c. fine, dry breadcrumbs
- 2/3 c. finely crushed corn chips
- 1 (1/1/4 oz.) pkg. taco seasoning mix
- 2 lbs. chicken drumettes, skinned
- 1 (16 oz.) jar taco sauce, divided
Spinach Salad with Lemon Honey-Mustard Dressing

Toss salad ingredients in a large bowl
- For Salad:
- 6 c. leaf spinach, washed and dried with stems removed
- 1 small red onion (in rings)
- 1/2 c. slivered almonds, toasted
- 1/4 c. real bacon bits
- 1 (11 oz.) can Mandarin oranges, drained
- For the dressing:
- 3 TBSP. olive oil
- 2 TBSP. honey
- 2 TBSP. Hellman's honey-mustard
- 3 TBSP. lemon juice
- 1 package Equal sweetener
- 1/2 tsp. chopped garlic

Preheat oven to 350 degrees
- 2 (4 oz.) jars chicken and vegetable baby food
- 1/2 c. powdered milk
- 1 c. wheat germ
Front Porch Lemonade

Combine sugar and boiling water, stirring until sugar dissolves
- 1 1/4 cup sugar
- 1/2 cup boiling water
- 1 1/2 up fresh lemon juice
- 4 1/2 cups cold water
- Garnish: Lemon slices
Marinated Grilled Vegetables

Combine first 7 ingredients in an extra large bowl; set aside
- 1/2 c. balsamic vinegar
- 1/4 c. extra-virgin olive oil
- 2 TBSP. dry white wine
- 1 TBSP. finely chopped shallots1
- 1 1/2 TBSP. minced garlic
- 1/2 TBSP. freshly ground black pepper
- 1 tsp. kosher salt
- 4 new potatoes, unpeeled
- 4 Roma tomatoes,cut in half length-wise
- 3 small zucchini, cut in half length-
- wise
- 2 ears yellow corn, cut into 3" pieces
- 2 purple onions, cut into 3/4" slices
- 2 portabella mushrooms, quartered
- 1 lb. fresh asparagus, trimmed
- 1 small eggplant, cut length-wise into 1" slices
- 1 red bell pepper, quartered
- 1 yellow bell pepper, quartered
- 1 TBSP. chopped fresh chives
- 1 TBSP. chopped fresh rosemary
- 1 TBSP. chopped fresh parsley
Buffet Green Beans
